Thought of the day...

Hummus..

This is some good stuff. It is very budget friendly and yummy.  It is great for parties as a appetizer or just for a quick snack.

1 clove garlic
1/4 cup tahini (sesame paste)
1/2 teas. cumin
juice of one lemon
1 15 oz can chickpeas (garbanzos)
2 tablespoon olive oil
water for adjusting consistency
salt and pepper to taste


In a food processor puree the garlic, tahini, cumin and lemon juice. Add chickpeas and olive oil and puree until smooth. Add water to desired consistency add salt and pepper to taste.  Dig in..

Plum Cake


I love all kinds of fruit especially in the summer. So I try to finds recipes using these while they are in season. This is a yummy cake.

3 eggs
1/2 cup butter softened
1/2 cup white sugar
1 teas. lemon zest
1 cup all purpose flour
1/2 teas. baking powder
1 1/4 cups plums, pitted and sliced


Preheat oven to 375. Grease a tube pan. Separate the eggs, in a small bowl beat the egg whites until stiff peaks form. Set to the side.  In a large bowl cream the butter with the sugar, beat in the egg yolks. Stir together the flour and baking powder then beat the flour mixture into the creamed mixture. Gently fold in the egg whites. Spread the batter evenly into the tube pan. The batter layer will be thin. Arrange the plums onto of the batter. Bake for 40m minutes or until cake test done. Place on cooling rack and enjoy..

Loaded Potato Buffalo Chicken Casserole...

This dish is so yummy. Very easy to make and so good...


1 1/2 lb. boneless chicken breast
1/3 cup Moores buffalo sauce
1 bag shredded hash browns (defrosted)
1 cup ranch dressing
1 cup cheddar cheese
1 can cream chicken soup
1/2 lb. bacon crumbled
chopped basil

Cut chicken into pieces. Mix buffalo sauce with chicken. Layer in botton of a 9x13 baking dish. Mix potatoes, ranch, cheese and soup together. Pour over chicken and sprinkle crumbled bacon on top and bake covered for 30 minutes. Uncover and bake 20 to 25 more minutes and enjoy...



Cooking tip of the week...


Baking powder 1 teas. - 1/4 baking soda and 1/2 teas. cream of tarter

Mexican Pork Stew..

I took it as long as I could, I need mexican food. lol  This is a new recipe that I have tried and love..

2 lbs. boneless pork shoulder cut into 1 1/2 inch pieces
1 can kidney beans drained and rinsed
1 can pintos drained and rinsed
2 ears frozen corn, thawed and cut into 1 1/2 inch pieces
1 pk. taco seasoning
2 cans stewed tomatoes, undrained
1 can tomato sauce
1 cup chopped onion (opt)


Place the pork,beans and corn in slow cooker. Mix seasoning mix, tomatoes, tomato sauce and onion until blended. Pour over pork and stir lightly. Cover and cook on low for 8 hours or 4 hours on low. Enjoy..

Meatball Subs..


My family love these and they are very easy and good..


1 bag meatballs
2 cups mozzarella cheese
Hoggie buns
1 jar marino sauce  ( Or my recipe for it)
parmesan cheese

Place the meatballs in a pan until tender and warm. Pour the marino sauce over them and simmer for 5 minutes. Toast the hoggie rolls and and place the meatball and marino sauce over the buns top with shredded cheese let melt and sprinkle parmesan over meatballs and grab some chips and dig in...

Cherry Limeade..

This is a must around our house for my kids. They love this stuff and so I do.  It is super easy and yummy.


2- 2 liter lemon lime soda
2 cans frozen limeade
2 jars of maraschino cherries
2 limes sliced

Place all ingredients in a drink dispense and stir and enjoy..





Memorial Day brownies..

These are just a simply way to let your kids in on a treat for the holiday.


1 box brown mix
red,white, and blue sprinkles


Make brownies per box instructions. When done sprinkle the sprinkles on the and enjoy..



Stuffed Burgers...

Since it is Memorial Day and the kick off to summer, It is a must at our house to have a great burger.
So this year I have decided to stuff our burgers. I love the idea of biting into a burger with some yummy cheese and bacon in the middle. 



2 lbs. ground beef
McCormick hamburger seasoning
Muenster cheese shredded  (or your favorite cheese)
bacon sliced chopped
buns


Mix ground beef with mccormick seasoning and pat into patties. Make them thin and place the cheese and chopped bacon on top and place another pattie on top on cheese. Press edges together and grill until desired doneness. Don't forget the corn on cob, potato salad, and watermelon.

Red, White and Blue cake..

I always try to make dishes that reflect the occasion. Since this is Memorial Day weekend I decided to make this cake like our flag. It was delicious and my kids loved that it was like a flag.


1 box white cake mix
1 box vanilla instant pudding
1 container of vanilla icing
1 container of blueberries
1 container of strawberries sliced in half


Make cake per box instructions. When cake is done take out and poke wholes in cake with wooden spoon. Mix pudding mix per box instructions and just when it starts to thicken pour all over cake. It will thicken in cake. Icing and decorate with blueberries and strawberries.

Memorial Day Frozen Lemonade Pie..

This is a great cold treat for this beginning of summer holiday..  I just added some fruit and it was awesome..

Crust
2 cups crushed graham crackers
1/4 cup sugar
7 tablespoon butter melted


Filling
1 6 oz can frozen lemonade
1 14 oz can eagle bran milk
2 cups heavy cream

Topping
1 cup blackberries or blueberries
1 cup raspberries or strawberries
2 tablespoon sugar
1 tablespoon fresh lemon juice

Mix the graham crackers,sugar and butter together and press in pie pan. Bake 350 for 7 minutes. In a cool bowl whip the cream until stiff peaks form. In another bowl stir the lemonade and eagle bran together and fold in to cream mixture. Pour into crust and freeze over night. About a hour before you serve make the fruit topping and add to top of pie and enjoy...




Marinated Pork Chops..

This is another great Memorial Day idea. I like to buy pork tenderlions and slice them myself. You really save money and get the best chops from these. I cook for 6 people daily so I usually cut the tenderloin into three chunks.

6 to 8 pork chops
3 tablespoon creole mustard
3 tablespoon olive oil
3 tablespoon red wine vinegar
2 tablespoon worcestershire sauce
2 teas. minced garlic
1 teas. dried thyme
1/2 teas. salt
1/2 teas. pepper


In a bowl whisk the mustard,olive oil,vinegar,worcestershire, garlic, thyme, salt and pepper together in a bowl. Place the chops in a large plastic bag and pour the mixture over and marinate for at least 30 minutes. Enjoy







Barbecue Baked Beans..

I came up with these beans while I was experimenting. My whole family loved these so they are a keeper... These are a great beans to make with your Memorial Day meals..

1/2 lb. ground beef
1 can pork-n-beans
1 can northern beans
1 can light red kidney beans
1 tablespoon mustard
1/2 cup hickory barbecue sauce
1/4 cup ketchup
1 teas. chili powder
1/2 lb bacon


Mix all the ingredients together and place bacon on top. Bake at 350 for 40 minutes.. Enjoy..

Barbecue Chicken grilled...

It is time to kick off the Holiday weekend by getting outside and enjoying the warm weather..  And what better way to do this than to fire up the grill and eat outside..This is a awesome juicy chicken and a great start to the kick off of summer.....

Marinade
1 32 oz carton of chicken broth
1/4 cup olive oil
2 oz mccormick grill mates Montreal chicken seasoning
3 garlic cloves minced
8 pieces of chicken

Glaze
1/8 cup dijon mustard
1/4 cup honey
1 tablespoon olive oil


Mix the chicken broth, olive oil, Montreal chicken seasoning, and garlic cloves. Place the mixture and the chicken in a gallon sized plastic zipper bag and marinade over night or longer.
Mix the dijon mustard, honey and olive oil together and brush on chicken as it is cooking.  Cook chicken until done on a grill. Different grills vary in cooking time and size of chicken. Just make sure centers are done and not bloody.  Enjoy this with my baked beans, mac-n-cheese, potato salad or corn on the cob recipes.. Happy Grilling..

Chicken Stir Fry

This is a recipe that I got from a friend of mine years ago. This is another dish I make when my kids want Chinese. It is simple but delicious.

1 lb. chicken breast or strips
1 bag of frozen stir fry veggies ( your choice) I use broccoli, cauliflower and carrots
soy sauce to taste  ( I use the low sodium)
1 8 oz box spagetthi noodles


Cook chicken until completely done. Cut into small size pieces. Cooking time will vary according to size of chicken. You can use tenders and it doenst take but about 5 to 10 minutes. I cook these on the stove in a little olive oil. In another pot boil and drain spagehtti nooodles per pack directions. In a third pot cook your veggies until tender but still firm. When everything is done in a large pot put the spagehtti noodles, chicken and veggies and add soy sauce to taste and stir all together and dig in. I usually never have any left.


Cooking Tip of the Week....

To remove the burnt taste from scorched milk.. Put the pan in cold water and add a pinch of salt to milk....

Peachy Cream Pie with Streusel topping...

I love peaches, and anyway I can find to use them in a recipe I do...  This is a awesome pie..

3/4 cup sour cream
2 oz. cream cheese
3/4 cup sugar
3 tablespoon cornstarch
2 eggs beaten
1 tablespoon vanilla
2 teas. cinnamon
2 15 oz. cans sliced peaches
1-9 inch unbaked pie crust


Strain peaches from juice as much as possible. If peaches are think cut them thiner.
Cream cream cheese and sugar together until softened. Mix in sour cream and cornstarch until smooth. Add eggs, vanilla and cinnamon. Carefully fold in peaches. Place into pie crust and top with streusel topping below.

Streusel Topping

1/2 cup all purpose flour
1/4 cup brown sugar
1/2 stick unsalted butter
1/2 teas. cinnamon

Combine all ingredients together and place in food processor, pulse until crumbly. Place on top of pie and bake at 415 for 40 minutes. tent with foil for awhile so that streusel don't burn. Enjoy..

Broccoli Beef Stir Fry with Rice

This is a great take on this Chinese dish. My kids ask for Chinese occasionally and this is one of the dishes I make for them..


1/4 cup all purpose flour
1 can beef broth
2 tablespoon soy sauce
1 lb. round steak cut into strips
1 clove garlic minced
4 cups fresh broccoli


Mix the flour, broth and soy sauce into dissolved.  Cook steak strips for 2 to 4 minutes until brown in a skillet. Stir in the mixture and the broccoli with the meat and simmer for 10 minutes until sauce is thick. Make some rice and dig into this awesome dish...

Hamburger Steak...

This is a very tasty and budget friendly meal.  I love to make this.


2 lbs. ground chuck
3 tablespoon Worcestershire sauce
1tablespoon minced parsley
2 cloves garlic minced
3/4 teas. Salt
1/2 teas. Pepper
1 sm can mushrooms
1 can beef broth
1 pk. Pioneer brown gravy mix


In a large bowl combine ground chuck, worcestershire, parsley and garlic together. Shape into patties. Heat a lg. skillet and place patties in. Cook 4 to 5 minutes on each side. Drain skillet. Add patties back to skillet. In a small bowl add the broth, gravy pack and mushrooms. Bring to a boil and simmer for 10 minutes. Serve over cooked egg noodles, mash potatoes or rice.  Get some green beans or a nice salad and dig in. Don't forget a roll.

Thought of the day..

Time heals almost everything, give it time.....

White Chicken Spinach Lasagna...

I love to have chicken on Sundays. Im not sure why but it just seems like it should be. This is a great dish and so good.

2 cups shredded mozzarella cheese
2 can cream mushroom soup
1 1/2 cup milk
1 10 oz pk. frozen chopped spinach thawed and drained
1 egg
1 pint part skim ricotta cheese
12 lasagna noodles cooked and drained
2 cups cooked diced chicken
1/2 cup grated parmesan cheese

Preheat oven to 350. Save 2/3 cups mozzarella cheese for top. Combine in a small bowl the 1 1/3 cup mozzarella cheese, milk and soup. Set aside. In another bowl combine spinach, egg and ricotta cheese and mix well. Add to soup mixture. Spread 1/3 of the mixture in a 9x13 baking dish. Spread chicken on top of the mixture. Then 4 of the noodles. Repeat layers ending with noodles. Top with the parmesan cheese and the 2/3 cup mozzarella cheese. Bake for 40 minutes or until bubbly. Let stand for 15 minutes and enjoy..

Chocolate Hostess Cupcakes

My daughter has been wanting these lately. So we decided to see what we could do to make them.  This is what we come up with.  They are yummy..

1 box devils food cake
1 cup whipped frosting vanilla
1/2 cup marshmallow creme
1 sm. bag semisweet chocolate chips
2 teas. Corn syrup


Make cake mix per box instructions.  Take out and let cool. Mix frosting and marshmallow creme together and poke wholes in cupcakes center and with a plastic ziplock squeeze the filling into the cupcakes.  Melt the semisweet chocolate chips and add cron syrup. Pour over cupcakes and enjoy...




Shrimp Po Boy Sandwich....

I'm am in so need for a beach trip. I have a few months to go before I can go, so making seafood is as close as I can get at the moment.


2 lbs. shrimp peeled and deveined
Olive oil 
Garlic to taste
Creole season to taste
Shrimp sauce
Shredded lettuce 
Tomatoes sliced

Cook shrimp in a skillet with a little olive oil and garlic. Sprinkle creole seasoning to Taste on Shrimp.  Take a hoggie a roll and spread shrimp sauce on one side and place shrimp, lettuce and tomato. Dig in...

Relaxing....

I have all my spring cleaning done. Yay me..  So today I am going to relax and  try some new recipes to share with you guys..  For lunch I am posting the steaks and potatoes, so for dinner I am thinking shrimp po boys sandwiches. Yum... And my daughter has been wanting some cup cakes like the hostess ones that are chocolate with vanilla cream inside and chocolate glaze on top...

Grilled Round Eye Steak and Roasted Potato's with Tarragon and Dill

I was looking in the freezer to see what to make for lunch. I seen the steaks that I bought to make the steak sandwiches with. So I decided to just throw them on the grill. This cut of meat is a very budget friendly cut, so I marinated it and and made some roasted potato's and it was awesome.

Round Eye Steak

 2 lb. steak
Weber steak and chop season to taste
Dales marinate

Brush the steaks with dales and sprinkle with season. Place on grill and grill until desired doneness.


Roasted Potato's with Tarragon and Dill


2 lbs potatoes  red or Yukon
Morton season salt
Tarragon  chopped
Dill chopped
Butter
Olive oil

Cube potatoes and place on a foil sheet. Sprinkle season salt on. Chop the tarragon and dill if you have fresh or use dried. Cut butter pieces and spread all around. Drizzle olive oil all over and place on grill covered with foil.  Enjoy this very budget friendly meal..

Black Bean, Corn, Red Pepper, Avocado Salsa

This is a really tasty and quick salsa to eat with the mexican burgers.


1 avocado chopped
1 red bell pepper chopped
1 can corn drained
1 can black beans drained and washed
1/3 cup lime juice
1/2 cup olive oil
1 clove garlic
1 teas. salt
1/8 teas. ground cayenne pepper
chopped cilantro to taste

All the chopped avocado, bell pepper, corn, black beans together. Add the lime juice, olive oil, garlic, salt and cayenne pepper. Sir all together and grab some tortilla chips or just eat alone.


Mexican Burgers..

I know more mexican. :) But these are so yummy, and a great way to spice up a burger..



1 lb. ground beef
1 pk. taco season
shredded lettuce
black olives
salsa
cheese shredded
jalapeƱos
buns

Mix the taco season with the ground beef and make into patties.  Grill burgers until done. Time may vary, depends on how you like your burger cooked.  Take off grill and add the toppings you like and enjoy..

To cook hamburgers in a hurry, poke a hole in the center when shaping. The centers will cook more quickly and when the burgers are done, the holes are gone..

Peanut Butter Dessert Pizza

I am taking a few days off to get some spring cleaning done. So I am going to get some help from the kids and this is my way of rewarding them for helping me out.


1 16.5 oz package frozen sugar cookie dough
1/3 cup softened butter
1 egg
1/2 cup confectioners sugar
1 cup creamy peanut butter
15 mini Reese's cups
1/2 cup peanut butter chips


Preheat oven to 350. Grease a 14 in pizza pan and mix cookie dough, butter and egg together in a bowl. Press dough on the pizza pan cover completely. Bake for 10 to 12 minutes and set aside and let cool. Beat sugar and peanut butter in a bowl into combine. Spread mixture over cooled cookie dough. Sprinkle the Reese's, and peanut butter chips all over the cookie and dig in...


Pork Chops with Dijon Mustard Sauce

I love dijon mustard and my daughter loves pork chops. So this is a great combination for us both. And the fact that it is really good, is even better.

6 boneless pork chops
lemon pepper seasoning
olive oil
1 tablespoon dijon mustard
1 lg. can cream
1 tablespoon flour
salt to taste


In a skillet pour a little olive oil in the bottom. Place pork chops in skillet with lemon pepper seasoning on each side. Cook until done. About 15 to 20 minutes. Take out of pan and add the cream and flour, salt and mustard to pan. With a wooden spoon scrape the drippings from the bottom of skillet to combine with the cream mixture. Heat until thick and bubbly. Make some rice and limas or veggies of your choice and enjoy.

JalapeƱo Cornbread

This was a recipe that my grandmother made. It goes perfect with the Mexican Shepherd's pie.

2 cups corn meal
1/2 lb. sharp cheddar cheese grated or mild
1/2 jar jalapeƱos chopped
2 eggs
1/2 cup vegetable oil
1 lg. can corn
1/3 cup butter milk
3 tsp. baking powder
1/2 teas. salt

Preheat oven to 375. Mix all ingredients together. Pour into a grease skillet and bake for about 25 to 30 minutes or until done.  You can use self rising corn meal just don't use the baking powder and salt.









Mexican Shepherd Pie...


You guys know that I find ways to make mexican out of almost everything. :) So here is my newest invention. :)

1 lb ground beef
1 can rotel
1 can black beans
1 cup frozen corn
1 pk. taco seasoning
jalapeƱos to taste
1 pk. 6.6 oz instant mash potatoes 
2 cups salsa


Brown and drain ground beef. Mix the taco seasoning, rotel, black beans, corn, salsa and jalapeƱos to meat. Make mash potatoes per package instructions. Place mash potatoes on top of meat mixture and add cheese and bake at 350 for 12 to 15 minutes. Or until cheese is melted.. Enjoy this with the jalapeno cornbread..

Strawberry Cheesecake...

It is the season for strawberries. So as I was riding by the local stand I was thinking about what all I could make with them.. And this the the first thing that came to mind.. And it is so yummy..

1 8 oz cream cheese softened
1 can eagle bran milk
1/4 cup lemon juice
1 teas. vanilla
1 graham cracker pie crust
1 pk strawberry glaze
1 pk strawberries


Mix the cream cheese, eagle bran, lemon juice, vanilla together. Pour into pie crust, pour the glaze over the top of the cream cheese mixture. Slice or leave strawberries whole and place on top of glaze. Refrigerate until cold and enjoy...







Stuffed Pepper Jack and Broccoli Chicken

This is another one of my favorite things to eat. These three ingredients go so good together. You have got to try this. You can bake or grill these..

6 chicken breast boneless, skinless
1 block of pepper jack cheese
1 bag of broccoli florets
morton seasoning salt
4 tablespoons butter
parmesan cheese

Coat chicken with butter, morton seasoning salt and roll in parmesan cheese. Bake Probably around 20 to 30 minutes a pound. In a sauce pan cook the broccoli until tender. Shredded the pepper jack cheese and set aside.  When chicken is done slice into and fill with broccoli and cheese and put back in oven for just a few minutes until the cheese is melted. Make some rice and enjoy this meal...

Mini Cherry Pies...

These are what my daughter made me today. They are awesome and yummy. She is so good to me...


1 9 in. unbaked pie crust 
1 can pie filling
1 egg
2 tablespoons water
1 teas. white sugar
1 teas. cinnamon

Preheat oven 15 minutes at 425. Let dough get room temperature and line a baking sheet with parchment paper. Roll out pie crust and lightly flour. cut off edges of the circle and form a square. Cut into four quarters. Place 2 tablespoon pie filling on each square. Whisk egg and water together and Brush mixture on the edges of the crust. Fold top edges  of dough over to form a rectangular pie. Crimp edges with a fork to seal. Freeze 10 minutes. Brush tops with more of the egg mixture and bake 15 to 17 minutes. Mix the sugar and cinnamon together and sprinkle on top.


Shrimp Pasta Alfredo

This is a very quick, easy and yummy meal.. It is a favorite around our house.


1 lb shrimp peeled and deveined
1 8 oz box spaghetti noodles cooked and drained
1 small container whipping cream
2 cups parmesan cheese
1 teas. butter
2 teas. olive oil
1 teas. minced garlic


Boil and drain spaghetti noodles per package. In a pan add the oil, garlic and shrimp. Saute until done.  In a saucepan heat the cream, parmesan cheese and butter until boiling. Boil until desired thickness. Pour shrimp into spaghetti and sauce on top and enjoy..

Mom's special present...

I have already given my mom her gifts, because her birthday was this week too.  But my mom is very special. She makes crochet baby blankets for our friends who are having babies.  So I have gathered a lot of photos of the kids that she has made blankets for over the years,and put them in a album for her to have.  Se is going to be so excited to see them all..

Rib Eyes Steaks...

These are my moms favorite steak.. If she wouldn't have ask for baked spaghetti these would have been my second choice.


Rib eye steaks
garlic powder to taste
onion powder to taste
worcestershire to taste

Season steaks with garlic salt, onion salt and worcestershire. Grill steaks for about 7 minutes on each side or until desired doneness. Make you are nice salad and roasted potatoes. Get some rolls and make on my nice desserts and enjoy....

Tomorrow is Mothers Day, My Mother has ask for me to make Baked Spaghetti for her. So I am making it with a Salad and a french bread loaf.  I have already posted Baked Spaghetti for you guys...
You guys need to find out what your moms want and make it for her.  But a good steak is always a good choice if you not sure what to make..  I will be posting..

Boy's Birthday Party Spread...





Boy's Birthday Party Menu...

It is the boy's birthday party today... We don't normally have their parties together, but we have had such a busy schedule that it is what we ended up having to do. I have combined a lot of their favorite foods and most of them I have posted the recipes for you guys already. But the butterfinger cake, hot dog chili and the veggie dip I will be posting today for you guys.  I will post pictures of the food for you guys to see as well.. Pic's coming this evening...


Hamburgers cheese, lettuce and tomato
Hot dogs chili and cole slaw
Potato salad
Mac n cheese
Baked beans
Chips
Fruit tray and dip
Veggies and dip
Key lime cake
Butterfinger cake

Hot dog chili....

I have got to have chili on my hot dogs..  And I like to make my on, I don't really like the can ones. There is nothing like a good hot dog...

1 lb. ground beef
1 tablespoon worcestershire sauce
1 teas. Mustard
2 teas. Chili powder. Or more if you like
1 cup ketchup


Brown the ground beef and drain. Stir in the others ingredients and simmer for a few minutes and get a awesome Hebrew national hot dog and cole slaw and some mustard and enjoy...


Veggie dip....

This is so simply and so good.. I like to make this the night before and let in get cold..

1 lg. container of sour cream
1 pk. Ranch dip season

Mix the two together and cut up some veggies and enjoy..
