Carmel Chocolate Chip Brownies...

My kids all love brownies, so I make them allot. I like to mix them up soe with different ingredients.
So this time I used Carmels and chocolate chips..


1 box brownie mix
1 bag of carmel candies
1 bag chocolate chips


Make brownie mix per box instructions. Place brownie mix in a 9x13 baking dish.  Unwrap carmel candies and spread on top of brownie mix.  Spread chocolate chips on top and bake per box instructions.

This is one of my favorites, and since my family is on the own on dinner this week. This is another one of my easy suguestions.



Loaf bread
bacon (baked or fried)
lettuce leafs
tomotoes sliced
mayo
dijon mustard


I have started putting my bacon in the oven lately. It is just as good and no mess of frying..  So bake bacon on 400 around 15 minutes or until desired doneness. Place mayo in one slice of bread and dijon mustard on the other. Place bacon, lettuce and tomato on the slices and enjoy...

Stuffed Peppers...

My husband likes bell peppers and I don't. But I do love Mexican food.  So I decided to make us both happy and take my left over taco meat and Spanish rice and mix them together and stuff them into a bell pepper..  Great way to use left overs from Mexican night.


6 bell peppers
1 lb Ground beef
1 pk. Taco season
1 box Spanish rice
1 cup Salsa
1can black beans
Cheese

Brown ground beef and add taco season. Core and blanch bell peppers. Then cook the rice in the blanching water per box instructions. Take the taco seasoned meat and mix with the rice and add salsa stir all together and place into peppers.  Bake for 350 for 25 minutes.  Top with Mexican blend cheese and bake 10 to 15 minutes more and dig in..

Brushing beaten egg whites over a pie crust before baking gives it a beautiful glossy finish.

Cheesy Grilled Cheese Sandwiches..

I am having to work a different shift this week, so the family is having to cook themselves. :)  So I have gave them easy things to make such as this one.

Loaf bread
munster cheese
chedder cheese
butter


Butter each slice of bread on both sides. Place cheese on the slices. ex.. 1 slice bread 1 slice cheese.
place in oven on broil until golden brown and cheese is melted. Take out of oven and place the slice together cheese on cheese. You can even get some tomato soup to enjoy with these...

These are a new treat that I have tried to see if they are a keeper for our trip. And so Far so good..

6 cups rice crispy cereal
1 cup peanut butter
1 12 oz butterscotch chips


Melt the butterscotch chips and peanut butter on the stove or in the microwave. Once melted pour in cereal and stir together. Pour into a 9x13 baking dish and press flat. Cut into squares when cooled.

Twice Baked Potatoes..


These are so awesome. I love potatoes anyway they can be made. This is a great way mix them up..


5 lbs baking potatoes
1/2 block cheddar cheese shredded
1/2 block pepper jacked cheese shredded
1/4 cup milk
1/4 cup butter
2 tablespoon sour cream
2 teas. minced garlic
1 teas. dijon mustard
salt and pepper to taste

Wash and slice slits in the potatoes. Rub olive oil and sea salt on skins. Bake 400 for 1 hour or until knife can go through. Take out and slice into, scoop out inside into a bowl. Mix the milk, butter, sour cream, garlic, mustard and salt and pepper with the insides of potatoes. Mash together and scoop back in potatoes and top with cheese and place back into over for 15 more minutes. Enjoy..




Baked Bisquick Chicken...

This is a good way to make crispy chicken without frying... It is really easy and yummy..



3 lbs chicken tenders
2 cups bisquick
morton season salt to taste
1 cup parmasen cheese
butter
olive oil cooking spray

Mix the bisquick with the season salt,and parmesan cheese. Roll tenders in the mix and place in a baking dish. Bake 400 for 20 to 30 minutes until brown and crispy. Place a few butter pieces in the dish and spray chicken with cooking spray. enjoy.. These are great with corn on the cob and twice baked potatoes...

Muddy Buddies..

This is the favorite of our beach treats of my kids and mom. This will not last long at all.. They are like chips, you cant eat just one..


9 cups rice chex cereal
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter
1 teas. vanilla
1 1/2 cups powdered sugar

Measure cereal into a large bowl. Microwave in a bowl the chocolate chips, peanut butter and butter covered for 1 minute. Microwave 30 seconds longer or until mixture can be stirred smooth. Add vanilla. Pour mixture over the cereal and evenly coat. Pour into a 2 gallon plastic resealable plastic bag and add powdered sugar, close bag and shake until all is coated. Spread on wax papper to cool and store in a air tight container in refrigerator. Enjoy...

Salty Chex Mix..

This is another treat that I make us to go on vacation. It is salty and so yummy. It is a great treat to travel with for a snack...


3 cups rice chex mix
3 cups wheat chex mix
3 cups bugles
1 cup pretzels
1 cup Chez its
1 can mixed nuts
6 tablespoon butter
2 tablespoon worcestershire sauce
1 1/2 teas. season salt
3/4 teas garlic powder
1/2 teas onion powder

In a large bowl, mix the cereals,bugles,pretzels, bagle chips together. In a small bowl melt butter and stir in seasonings and worcestershire sauce. Pour over cereal mixture.  Pour on to a large baking sheet and spread out evenly and bake at 250 for 1 hour stirring every 15 minutes.  Spread out on paper towels to dry and enjoy...


Homemade Beef Jerky...


This is another one of my beach treats for the family. This is so easy to make and so good. It never last long.


1 London broil
1/2 bottle dales marinate


Cut the London broil into thin strips. Place in a plastic zip bag with dales marinate and marinate for 12 to 24 hours. Take the oven racks out and place on as close to top as you can get and one as close to the bottom as you can. Take the meat out of the bag and place on a tooth pick and hang off the top rack. Place tinfoil over the bottom rack to catch the drippings.  Leave the oven door open to let out the moisture. Bake at 200 for 6 to 8 hours. Meat should bend. I use to use all types of spices in this recipe but I found that the dales marinate is really awesome to use..

1 lg. bag M&M's
1 lg. container of mix nuts
1 lg. box of rasins


Combine the M&M's,nuts and rasins together in a air tight storage container. Enjoy..

Homemade Vanilla Ice Cream.

I made this on Fathers day to go with our apple pie that I posted. It turned out awesome, not a drop left..


1 cup Whole milk
1/2cup sugar
Dash salt
2/3 cup half and half
1/3 cup whipping cream
1/2 teas. Vanilla

Combine milk,sugar,salt,half and half, whipping cream and vanilla together. Pour into canister that has. Been frozen and use  directions on ice cream machine for about 20 minutes and enjoy.

One of the secrets of a long and fruitful life is to forgive everybody everything everynight before you go to bed.

Teriyaki Chicken Wings..

These are great for parties and family get togethers..

1 cup water
1 cup soy sauce
1 cup white sugar
1/4 cup pineapple juice
1/4 cup vegetable oil
1 tablespoon minced garlic
1 tablespoon minced ginger
3 lbs. chicken wings or drumettes


Whisk together water,soy sauce,sugar, pineapple juice, oil. garlic and ginger. Place in a bowl and put in chicken and cover and marinate for 1 hour in refrigerator.
Preheat over 350 and take chicken out of bowl and place on a baking dish. Disgard the marinate. cook about 1 hour. enjoy..

Apple Pie...

This is a recipe that my mom gave me and it is so yummy and simply.. You will love this pie..


2 9inch frozen pie crust
1 can apple pie filling
2 cup  frozen apples
2 tablespoon cornstarch
1/2 cup sugar
2 teas. apple pie spice
In a large bowl combine the sugar,cornstarch, pie filing, apples,  and apple pie spice. spoon into one  of the crust that has been place in a pie pan. Cover the mixture with another crust and seal edges and flute. Make some slits in the crust and place butter slices on the top and sprinkle sugar. Bake at 425 for 45 to 55 minutes or until golden brown.  Enjoy, I am making some homemade vanilla ice cream to go with this..

Thought of the day...

Crab Deviled Eggs..

Since this is Fathers day weekend I have tried to post appetizers for you guys to use for your Fathers day get togethers. I hope that you guys enjoy these.


12 eggs 
1/4 cup mayo
1 teas paprika
1/2 teas mustard
1/2 teas old bay
 1 6 oz can lump crabmeat drained

Boil eggs in saucepan. Bring to a rapid boil and cover and turn off and let sit for 15 minutes, drain cool and peel. Cut the eggs in half and remove yolks. In a bowl mash the yolks with the mayo, mustard, old bay. Fold in crabmeat. Spoon mixture into eggs and chill for 1 hour. Sprinkle with paprika and enjoy..

Baked Potato Skins..

These are so yummy. I just love to make them. They are great for a quick snack or for a party food.

1/2 cup butter
1 garlic clove minced
Skins from 8 large baking potatoes
pepper and salt to taste
2 cups cheddar cheese
bacon bits


Melt the butter over medium heat. When it is hot and bubbly add garlic. Saute until soft. Cut each potato in half into 2 equal parts. Brush bottom with the garlic butter. Place each piece scooped side up on a baking
sheet.Sprinkle with salt and pepper. Scatter the grated cheese on top of buttered skins. Preheat oven to 350 and bake skins for 30 to 45 minutes or until hot and crispy. Enjoy...

Fried Pickles..

These are great snack. And they are so tasty..


1/2 cup buttermilk
salt and pepper to taste
1 16 oz. jar dill pickle slices
1 1/2 cups fine cornmeal
1 teas. old bay
1/4 teas. cajun season
1 qt. frying oil
1/2 teas cajun season
1 12 oz jar of buttermilk ranch dressing


In a dish combine buttermilk,salt and pepper. Place pickles in and set aside.
Pour flour, cornmeal, old bay and cajun season into a plastic resealable bag. Shake well and add pickles a few at a time and shake, remove and place on a plate with wax paper.  Heat skillet to 365 and add oil and fry until golden brown and slightly crisp 1 to 2 minutes. Drain on paper towels.. Mix the ranch dressing with the 1/2 teas. cajun season and mix. This makes a great dipping sauce... Enjoy

Jalapeno Poppers

A friend of mine wanted a recipe for these. So here ya go Sameeka, enjoy... :)

12 oz cream cheese softened
1 8 oz package shredded cheddar cheese
1 tablespoon bacon bits
12 oz jalapeno peppers, seeded and halved
1 cup milk
1 cup all purpose flour
1 cup dry bread crumbs

In a medium bowl, mix the cream cheese, cheddar cheese and bacon. Spoon the mixture into the jalapeno halves. Put the milk and flour into two seperate small bowls. Dip the peppers in the milk and then the flour, making sure coated well. Allow to dry for 10 minutes. Dip jalapenos in milk again and roll them in bread crumbs. Allow to dry again and repeat to make sure pepper is completley coated. Place in oven on 350 for 20 to 30 minutes and enjoy....

Homemade Peach Ice cream...

I am so loving my new ice cream maker. I tried the peach today..

1 cup whole milk
1/2 cup sugar
dash salt
2/3 cup half and half
1/3 cup whipping cream
1/2 teas. vanilla
1 cup fresh peaches

Combine milk,sugar,salt. Stir with a wire whisk until sugar is dissolved. Stir in half and half, whipping cream and vanilla. Pour into canister and freeze as use the directions on your maker.. Add fruit in at the last 10 minutes of the cycle. Mine goes between 2o to 40 minutes..

Homemade Chocolate Ice Cream..

I found a awesome price on a ice cream maker this weekend. So of course we made ice cream..
It was really yummy..


1 1/2 cups whole milk
1/3 cups sugar
dash salt
2 oz. semisweet chocolate squares finely chopped
1 egg beaten
1/2 cup half and half
1/3 cup whipping cream
1/2 teas.vanilla

Combine the milk, sugar, salt and chocolate in a saucepan. Cook over medium heat, stirring constantly, until chocolate is melted and the mixture is almost boiling. Slowly stir in 1 cup of the hot mixture with the beaten egg and stir until all is combine. Add back to saucepan. Cook and stir over low heat until slightly slick. 2 minutes is a good time. Stir in the half and half, whipping cream and vanilla. Cover and refrigerate for 2 hours. Pour into the canister of the ice cream maker and our machine said to run for 20 to 40 minutes. But they vary and you need to go by you machines directions.  Enjoy, this is great for hot days.

Cesar Bacon Pasta Salad

My daughter, my mom and I love pasta salads. So this is one of creations.


1 8oz box of pasta  (you choice)
1 can black olives sliced and drained
1 cup chopped up carrots
1 cup parmesan cheese
1 cup kens cesar dressing


Cook and drain pasta. Add the olives, carrots, parmesan cheese and dressing and mix all together. We had this with pork chops and mash potatoes, which I have already for you guys..

Breakfast Casserole..

Because it is Saturday and school is finally out and we are all home together. I have decided to make us a breakfast casserole. This recipe is so good and really hits the spot...

3 eggs beaten
1 pinch pepper and salt
1 10.75 oz can cream chicken
16 oz sour cream
1 2lb bag frozen hashbrowns thawed
1 lb sausage
2 cups cheddar cheese
1/2 cup butter melted

Preheat oven to 350. Lightly greese a 9x 13 baking dish. Season eggs with pepper and salt, pour into baking dish. In a large bowl combine the soup, sour cream, hash browns, sausage and cheese. Mix thoroughly and pour over eggs. Bake uncovered for 30 minutes remove and drizzle butter over top of casserole and bake an additional 15 minutes until golden brown...


Cherry Brownies...

This is a recipe that I was not so sure about when my daughter wanted to make these. Cherry and brownies strange. lol  But actually when I tasted them I was surprisingly shocked. They were actually awesome and so easy.


1 box brownie mix
2 eggs
1/4 cup veg. oil
1 21 oz can cherry pie filling divided
2 tablespoon hot water

Preheat oven 350. Coat a 9x 13 baking dish with cooking spray. In a bowl combine the brownie mix, eggs, oil and 1 cup cherry pie filling; mix well with spoon. Pour batter into a baking dish.  In a small bowl, combine hot water and remaining pie filling, and spread evenly over batter. Bake 45 to 50 minute or until done. Let cool and cut into squares.  Enjoy...

Yogurt Chocolate Chip Cookies....

My daughter found these and we just had to make them. They were YUMMY!


1/2 cup packed brown sugar
1/2 cup white sugar
1/4 cup margarine or butter
1/2 cup shortening
1/2 cup plain greek yogurt
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups semisweet chocolate chips

Preheat oven to 375 and grease cookie sheets. In a medium bowl, cream together the brown sugar, white sugar, margarine and shortening until light and fluffy. Stir in the yogurt and the vanilla. Combine the flour, baking soda, and salt stir this into the creamed mixture until incorporated, then mix in the chocolate chips. Drop by rounded teaspoonfuls 2 inches apart onto the baking sheets. Bake for 8 to 10 minutes in the oven or until the edges begin to brown. Cool for a minute on the baking sheet then take them off and cool on a wire rack.

Grape Black Cherry Oatmeal Bars..

I actually got this recipe from the pioneer women's website, she uses strawberry preserves. I found this recipe and made it awhile back and we all loved them. So I decided to use my moms homemade jelly. I will post her jelly recipes later in the summer when she starts canning..

1 3/4 sticks cold butter
1 1/2 cup all purpose flour
1 1/2 cups oats quick or rolled
1 cup brown sugar
1 teas. baking powder
1/4 teas. salt
1 pint jelly of your choice

Mix together the flour,oats, sugar, baking powder and salt. Cut in the butter and pour half of the mixture into a 9x13 baking dish. On top of the mixture spread the jelly. Cover with the other half of the oat mixture and bake for 30 to 40 minutes. These are yummy...

Stuffed Beef Burritos...

Ok time for some Mexican food. :)  These are so good and easy to make...


2 lbs. ground beef cooked and drained
1 can black beans drained, rinsed and heated  or refried beans
1 can rotel
mexican cheese
1 pk burrito season
pk burrito shells


Cook and drain meat. Add burrito seasoning to meat. Heat your shells and start layering. meat beans, rotel and cheese. Fold shells and enjoy... I like to have mexican rice with these. And I sometimes add my salsa, sour cream and jalapeños to mine....

Add about 7 drops of lemon juice to 2 cups whipping cream. It will make the cream beat up firm in about half the time...

Apple Cinnamon Muffins...

My daughter and I like to keep muffins for the boys and her to grab as the go out the door to school. So today we made apple cinnamon for them. These are so yummy.

3 cups flour
3/4 cup sugar
3/4 cup brown sugar
3 teas. Baking powder
2 teas. Cinnamon
1 cup milk
2/3 cup butter melted
2 eggs beaten
2 cups chopped Granny Smith apples

In a large bowl mix flour,sugar, browns sugar, baking powder and cinnamon together. Add milk,butter, eggs and apples and add to flour mixture. Mix well. Pour into muffin tins into cupcake liners.  Bake 375 for 19 to 23 minutes and let cool 5 minutes.  Enjoy..

Cherry- Blueberry Pie..

We eat dinner with my parents on Sunday's after church. She made this pie for us and it was yummy, so I am sharing it with you...

2- 9 inch refrigerated pie crust
1/2 cup sugar
2 tablespoon cornstarch
1 can cherry pie filling
1 1/2 cups frozen blueberries
1 egg white
1 teas. water
2 teas. sugar


Preheat over to 425, prepare pie crust per package. In a large bowl combine the sugar and cornstarch. Add pie filling and blueberries mix well  and pour into crust. Top with second crust and seal edges and cut off excess. Cut slits into pie. In a small bowl combine the egg white and water, beat with fork and brush over pie. Sprinkle sugar all over pie and cover edges with foil bake for 45 to 55 minutes. Take off foil and back the last 10 minutes to brown edges. Cool 2 hours before serving..

Sausage Dip..

We have spent the day with a friend of ours at a jack and jill baby shower. We did some four wheeling and some serious yummy eating.. This a a sausage that we had at the party..

1 lb sausage cooked and drained
2 8 oz blocks of cream cheese
1 can rotel

Drain and cook sausage. Place all ingredients in a crock pot and let cook until cream cheese is melted, stir all together and enjoy with some tortilla chips.. If you need a bigger portion for more people just double the recipe..
