Blackberry Crunch Cake

This is a yummy quick dessert that can be made with strawberries, blueberries or peaches..

1 20 oz can crushed pineapple in juice
1 21 oz can of blackberry pie filling
1 18 1/4 oz box of butter recipe cake mix
1 cup chopped pecans
3/4 cup butter melted

Preheat oven to 350. Pour pineapple into a 9x13 baking dish. Spread over evenly bottom of dish. Spread pie filling over top of pie filling. Sprinkle cake mix over top of pie filling. Sprinkle pecans over cake mix. Pour butter over top and bake for 38 to 45 minutes. You can use fresh fruit just add 1/2 cup sugar and juice of 1 lemon.

Mexican Meatloaf..

This is a great twist on meatloaf. 

2 lb. ground beef
1 can black beans (rinsed and drained)
1 pk. taco season
1 can rotel drained
2 cups crushed tortilla chips
2 cups salsa (your favorite)
2 cups Mexican cheese

Mix the ground beef with black beans, taco season, rotel, crushed tortilla chips, and 1 cup salsa.
Mix well and form into a loaf. Place in a 9x13 baking dish and bake for 40 minutes on 350. Take out and spread the other cup of salsa and cheese all over top and bake another 25 minutes.
Serve with Mexican rice. 


Mexican rice
2 cups rice 
4 cups water
1 pk. taco season
1 can rotel

Place all together in a sauce pot and bring to a boil. Reduce heat to med and cook for about 8 to 10 minutes. Fluff and enjoy.

Homemade Hamburger Helper..

This is a great quick meal that kids love..

Homemade Hamburger Helper

1 lb. ground beef
1 pk. taco season
1 box macaroni and cheese 

Brown ground beef and drain. Add taco seasoning.  In another pot cook macaroni and cheese per box instructions.Mix noodles and cheese together and add to the meat mixture.
Make a salad and grab some rolls and your done.

Taco Soup

 Love to make this. I like to load it up with jalapenos, pepper jack cheese and sour cream .I eat this with tortilla chips. It is a great chili type soup to throw in the crockpot or on the stove. Whichever you have the time for. You can also use turkey or chicken in this.


1 lb. ground beef
1 an black beans
1 can pintos
1 can kidney beans
1 cup frozen corn
1 can diced tomatoes
1 can Rotel
1 pk. taco season
1 pk. ranch dressing season

Brown and drain meat. Add black beans, pintos, kidney beans, corn, tomatoes, rotel ,taco season and ranch dressing to meat to crock pot and cook on low for 3 hours or in stockpot on stove for 20 minutes.

Queso Burritos..

I love Mexican food as you all know. So today I made lots of yummy thing to eat Mexican..
Queso Burritos, Salsa and Guacamole.

Queso Burritos

2 lb. ground beef
2 pk. burrito season
2 cans refried beans
8 soft burrito shells
2 pk. Mexican rice
12 oz queso melting cheese dip

Brown and drain ground beef and burrito season. Heat beans and cook rice per instructions. Warm shells and spread a layer of beans and meat mixture inside. Melt cheese. Wrap shell and pour melted queso over top and enjoy.

Salsa

2 cans diced tomatoes
2 can rotel
2 teas. minced garlic
2 teas cumin
2 teas lime juice
1 teas. salt
jalapenos to taste ( I like lots)
1 small onion chopped ( Im allergic don't use)

Mix all in food processor and pulse until all mixed. This is s good.

Guacamole

1 avocado
1 teas garlic
1 teas chopped onion
juice of half a lime

Get insides of avocado out and place in food processor with the garlic, onion and lime juice. Pulse until blended and enjoy. you can add tomatoes and peppers too.

Chicken Verde..

This is so easy to make and yummy.. I tried it out on the kids tonight and they loved it. So it is a keeper..

Chicken Verde

4 chicken breast boneless and skinless
1 large jar verde salsa

Place both in crockpot and cook 8 hours on high or 4 on low. Shredded with a fork. I made some rice and baby brussels sprouts.

Pork Tenderloin..

I put this in the crockpot this morning before I left for work. Just made some rice and collards and dinner was ready.


1 tenderloin
1 pk. onion soup mix
1 can cream mushroom soup
Rachael Ray poultry season
water

Cover each side of tenderloin with seasoning. Place in crockpot pour onion soup mix, mushroom soup and cover with water. Cook on high until falls apart. I had a large tenderloin so I cooked it 9 hours on high. It will depend on the size you cook. Normally 4 to 6 hours.


Collards

1 can collards
2 teaspoon olive oil
salt and pepper to taste
3 tablespoons vinegar

Mix all this in a sauce pan and bring to a boil.  Collards really go well with pork..


Cherry Cheesecake...

YUMMMMMMMMY.....

This is what my parents brought me for my birthday yesterday..

Cherry Cheesecake

1 8 oz cream cheese
1 can eagle bran milk
1/4 cup lemon juice
1 can cherry pie filling
1 graham cracker crust

Mix the cream cheese, eagle bran and lemon juice together until smooth. Place in pie crust. Pour cherry pie filling over top of cream cheese mixture. Chill for a few hours and dig in..

Marla's husbands apple dumplings.


This is some good stuff guys. Marla gave me this recipe and said they were awesome and boy was she right.. Thanks Marla and Rick..

Apple Dumplings

2 granny smith apples peeled and cored
2 cans crescent rolls
1 1/2 cup sugar
1 teas. cinnamon
1 cup butter
1 can mountain dew

Preheat oven to 350 and grease a 9x13 baking dish. Cut the apples into 8 wedges. A apple corer works perfect. Separate the crescent rolls into triangles. Place apple in the small end of the roll and roll up and pinch to seal ends. Place into the baking dish. In a small bowl add the melted butter, sugar and cinnamon mix together. Pour over dumplings and pour mountain dew on top. Place in oven for 35 to 45 minutes. Get some vanilla ice cream and enjoy.

Since it's my birthday weekend, I made what I wanted for dinner..

Steak

6 sirloin steaks
1/2 bottle dales marinade
1/ bottle steak sauce
1 teas. Webber Chicago steak seasoning

Place dales, steak sauce and seasoning in a large bowl and place steaks in mixture. Keep rotating steaks while marinating. Leave in marinade for about 10 minutes. Grill until desired doneness. Make a salad and a baked potato and enjoy..

Chicken and Dumplings

I made these for my guys tonight.. So good for such a cold yucky day...

Chicken and Dumplings

1 pk chicken tenders (cooked and shredded)
4 chicken bouillon cubes
2 cans chicken broth
2 can cream chicken soup
2 cans milk (use soup cans)
salt and pepper
4 cans biscuits

Place chicken in broth with bouillon cubes. Bring to a boil. Add milk, soup, salt and pepper. Bring to boil again. Tear biscuit into small pieces and drop into pot. Cook until biscuits are done, usually around 5 to 10 minutes. Will depend on what size you tear the biscuits.

Pulled Pork for dinner..

This is one of our kids favorite meals. I make this and it gets gone as fast as I shredded it..

1 boston butt
1/2 bottle Scotts barbecue sauce
1 teaspoon crushed red pepper flakes

Place Boston Butt in crockpot and sprinkle crushed red pepper flakes on top. Pour Scotts and enough water to cover butt. If you don't have Scotts you can use 1 cup white vinegar, 2 teaspoon hot sauce and red pepper flakes. This is yummy. Make some slaw and baked beans and enjoy.

My Pretty Girl Makayla..


Chicken Broccoli Alfredo Pasta

This is one of my kids favorite meals. It is quick and easy and yummy.. Grab some garlic bread and dig in...

Chicken Broccoli Alfredo Pasta

3 chicken breast
2 teaspoon minced garlic
morton season salt
1 bag broccoli florets
8 oz bow tie pasta
2 cups heavy whipping cream
2 teaspoon butter
1 cup parmesan cheese

Cook chicken with garlic and season salt in a small amount of olive oil until done all the way through. Cut into small pieces. In a separate pot cook broccoli. In a large pot cook pasta until done, around 10 minutes for both pasta and broccoli. When all is done drain pasta and broccoli. In pasta pot add the cream, butter and parmesan cheese. Bring to a boil and boil until desired thickness. Pour pasta, broccoli and chicken in the pasta pot and stir all together and enjoy...

Chicken Tortilla Soup

This is a great dinner for a cool night.

Chicken Tortilla Soup

3 Chicken breast cooked and shredded
3 can chicken broth
1 teaspoon minced garlic
2 tablespoon flour
1 can kidney beans
1 can black beans rinsed
1 cup frozen shoe peg corn
3 cups half and half
1 can cream chicken soup
1 cup salsa (your favorite)
2 teaspoon cumin
1 pk. fajita seasoning
sour cream
8 oz.cheddar cheese shredded
8 oz. pepper jack cheese shredded
tortilla chips

In a large pot place chicken, broth, garlic, flour, beans ,corn, half and half, cream chicken soup, salsa, cumin, and fajita seasoning. Bring to a boil then turn down and simmer for 15 minutes.  Top with cheese and sour cream. Eat with tortilla chips... Enjoy

What's for dinner..

I was in the mood for Mexican food so I made nachos. They were a huge hit at with the kids and quick and easy for me..

Nachos

2 lbs. ground beef
2 pks. taco season
1 can rotel
1 can black beans (rinsed)
1 cup shoe peg corn
2 cups cheddar cheese

Brown and drain ground beef. Add taco season simmer for 3 minutes. In separate pot put beans, rotel and corn, heat for 3 minutes and add to meat mixture. In 3 separate 9x13 pans spread the tortilla shells on bottom. Pour the meat mixture on top and sprinkle cheese all over top. Place in 425 degrees oven and melt cheese. Around 5 minutes and enjoy..

Moms Cheese ball..

This is a must at gatherings at our house. This would even be great for supper bowl foods.

Moms cheese ball

1 8 oz cream cheese
1/2 cup celery chopped
1/2 cup bell pepper chopped
1/2 cup purple onion chopped
1 pk. budding ham chopped
1/2 cup cheddar cheese

Mix all ingredients together and form into a ball. Eat this with you favorite crackers. I love triscuits with these.



Cheddar Cheese Soup

This is my daughters favorite soup, we always have this at her parties.

Cheddar Cheese Soup

1 bag broccoli florets
1 2 lb. block of Velveeta cheese
1 can sliced carrots
2 can diced potatoes
1 can cream chicken soup
1 can cream celery soup
1 can nacho cheese soup
1 can chicken broth

Place all this in a crockpot and cook on high for about three hours. Stir occasionally. I love this with sourdough bread. It is so good...


Chocolate Truffles..

These were a huge hit at Makayla's party. If you love chocolate you will love these... These would also be awesome for valentines day chocolates... Yummy

8 oz semisweet chocolate chips
8 oz bittersweet chocolate chips
1 can sweetened condensed milk
1 tablespoon vanilla
16 oz almond bark white or regular chocolate
sprinkles

Melt in a double boiler bittersweet and semisweet chocolate. Once melted add sweetened condensed milk and vanilla. Take off heat and let mixture cool in refrigerator for 20 minutes. Take out and use a mellon baller and make balls out of mixture. Place on parchment paper on a baking pan, and place back in freezer for 20 minutes. Melt almond bark until all smooth take balls out of freezer and dip in chocolate and place back on sheet to dry. Sprinkle before drying. Enjoy these.

Marshmallow Pops

These were a huge hit at Makayla's party. Perfect for a girls party..

2 bags purple chocolate melts
40 marshmallows
purple candy sprinkles
40 sucker sticks

Melt chocolate until all smooth. Place marshmallows on sucker sticks. Dip completely in chocolate and then in sprinkle. Enjoy

Tonight we had Taco Nacho salad. As you all know love Mexican food.. Recipe already posted for you to enjoy.
2 lb. ground beef
2 pk. taco season
lettuce
tomatoes
Mexican cheese
jalapeños
taco sauce
salsa
black beans

Brown and drain ground beef.  Add taco season simmer for 5 minutes. Layer in bowl  tortilla chips, lettuce beans, meat, cheese, tomatoes jalapeños. Dig in and enjoy.

Baked Spaghetti..

2 lbs. ground beef
2 teas italian season
2 teas morton seas salt
2 teas minced garlic
1 jar your favorite spaghetti sauce
1 8 oz box angle hair noodles
2 tablespoon butter
1 cup parmesan cheese
1 lg. container cottage cheese
1 egg
1 cup mozzarella cheese
1 cup cheddar cheese


Brown and drain ground beef with garlic, italian season and season salt. Add sauce and simmer for 5 minutes. In separate pot cook noodles until done, usually around 8 to 10 minutes. Drain noodles and pour into the bottom of a 9x13 baking dish. Add butter and 1/2 cup parmesan cheese to noodles and mix together. Mix cottage cheese an egg together an spread on top of noodles. Add sauce mixture and top with mozzarella and cheddar cheese. Bake covered for 45 minutes and uncover for 15 minutes. Make a nice salad and some garlic bread and dig in..

Today..

Dinner was Chili Beans, Cole slaw, rolls and a Eclair Cake. This is what my husband wanted for his send off. It was yummy and so warming on this cold day..

Chili Beans
2 cans pintos
2 can kidney
2 can diced tomatoes
1 can rotel
2 packs chili-o mix
2 lbs. ground beef

Brown and drain ground beef. Add all the other ingredients and bring to a boil. Simmer for 30 minutes and get a roll and slaw and dig in.

Cole Slaw
1 bag cole slaw with carrots
dill pickle cubes
1/2 cup mayo
morton seasoning salt
2 tablespoon dill pickle juice

Chopped slaw into small pieces or leave. Add mayo, pickles and season salt and mix together.

Eclair Cake

1 box yellow cake mix
2- 3 oz box vanilla pudding
1 container chocolate icing

Make cake per box directions. Poke holes in cake and mix the pudding together with milk per box directions. Pour pudding all over cake holes. Icing cake and enjoy.

We have lots to do today. My husband is leaving for his new job tomorrow, So I want to make him a special dinner this evening to celebrate. My daughter and I have lots of shopping to do to get ready for her sixteenth birthday party soon. I want to make a winter wreath for the front door. I am going to go get started on my day and I will post all my dinner and finds this evening..

What's for dinner..

Tonight we had Tater Tot Casserole. It has everything that kids loves and moms too. Very easy and budget friendly..


Tater Tot Casserole

2 lbs. ground beef
2 can cream mushroom soup
2 cups shredded cheese  ( cheddar or mozzarella )
1 bag of tater tots

Brown ground beef and drain. Add soup and a little water to make it creamy. Simmer for 5 minutes. Pour into bottom of a 9x13 baking dish. Sprinkle 1 cup cheese over top of meat mixture.  Place tater tots on top of cheese. Add the last cup of cheese to top of tater tots. Bake at 425 for 25 minutes and enjoy..

What's for dinner..

I so need to go grocery shopping, but I just haven't had the time. So today I made a taco nacho salad with what I had on hand, instead of what I usually use. So instead of Mexican style cheese I used mozzarella and instead of tomatoes I used rotel.. It actually turned out pretty good.

Taco Nacho Salad 

2 pounds ground beef 
2 taco seasoning packs
1 can rotel
jalapeños
mozzarella cheese
1 can black beans
ranch dressing
taco sauce
tortilla shells
lettuce shredded

Brown and drain ground beef. Add taco seasoning packs and a little water per package. Simmer for a few minutes. Get a large bowl and place tortilla shells in bottom then lettuce,beans,meat cheese,rotel,jalapenos,ranch dressing and taco sauce and dig in.

What's for dinner tonight..

Monday's are long days for me at work. So I try to take advantage of my crockpot on these days.
So I made pulled pork sandwiches for the family today.

Pulled Pork

1 boston butt ( I used a 6 pound one.)
2 cups vinegar
2 tablespoon hot sauce
1 tablespoon crushed red pepper

Place Boston butt in crock pot and add all the other ingredients too it. Cook on low for 6 to 8 hours. I like to cook it until it falls completely apart and shreds with a fork.

Peperoncini Pepper Meat Sandwiches..

1 large roast ( your preference)
2 cans beef broth
1 jar Peperoncini peppers and juice
Italian seasoning

Sprinkle both sides of roast with Italian season and place in crock pot. Pour peppers and juice on roast and add broth. Cook on low all day and when roast falls apart its done. You can eat this alone, over rice or as a sandwich, which is my favorite way to eat these..

I have lots of cleaning to do today. I have some new spice racks my dad made me to put up. I am going to reorganize my pantry. Also my husbands closet, getting him ready for his new job...  I have Peperoncini pepper Meat Sandwiches in the the crockpot for us to enjoy this evening.  What better for a rainy day at home..  Pictures coming this evening..

What's for dinner..

Homemade Vegetable Soup..

I am still on long hours at work, so I am having to make quick meals. The weather is really cold so I thought what would be better than soup to warm us all up..

1 lb. ground beef
1 can black eye peas
1 can diced tomatoes
2 can potatoes
1 cup frozen limas
1 cup frozen white corn
2 cans beef broth

Brown and drain ground beef. Add black eye peas, tomatoes,potatoes, limas, corn and beef broth.
Bring to rapid boil and cook until limas are tender. Around 10 minutes. Make some corn bread and enjoy..
