We have been here since Saturday and we are having a blast. I have relaxed and enjoyed the beach. The guys have been out on the boat fishing and I have cooked lots of food so far to make daddy happy. I have made beef jerky,potato salad,stuffed burgers, peach cobbler, trail mix and subs.. I will post pics soon.

Sorry Guys.!!

Sorry guys!! I have been working way to many hours the past few weeks. I am also trying to get us together for our family vacation and I am pretty much wiped out. But I will get back to normal soon. :) I have lots to get done this week and packing, making treats to take, laundry and shopping are all on my list. Hope you guys have a great and I will be sharing my week with you...:)

Chicken Guacamole Tostadas

I have been very busy with work lately which has been leaving me pretty much wiped out. But here is a mexican recipe that is very easy and yummy..
1 ripe peeled avocado
1 cup plus 2 tablespoons finely chopped tomato, divided
3 tablespoons fresh lime juice, divided
1/2 teaspoon salt, divided
1 small garlic clove, minced
1 tablespoon chopped fresh cilantro
1 tablespoon minced seeded jalapeño pepper
2 cups shredded skinless, boneless rotisserie chicken breast
8 (6-inch) corn tostada shells

Mash avocado and add salt,garlic and lime juice. spread on tostada shell. Spread the rotisserie chicken on top and add tomatos, cilantro, jalapeno and any other toppings you may like. Enjoy..
