Queso Burritos..

I love Mexican food as you all know. So today I made lots of yummy thing to eat Mexican..
Queso Burritos, Salsa and Guacamole.

Queso Burritos

2 lb. ground beef
2 pk. burrito season
2 cans refried beans
8 soft burrito shells
2 pk. Mexican rice
12 oz queso melting cheese dip

Brown and drain ground beef and burrito season. Heat beans and cook rice per instructions. Warm shells and spread a layer of beans and meat mixture inside. Melt cheese. Wrap shell and pour melted queso over top and enjoy.

Salsa

2 cans diced tomatoes
2 can rotel
2 teas. minced garlic
2 teas cumin
2 teas lime juice
1 teas. salt
jalapenos to taste ( I like lots)
1 small onion chopped ( Im allergic don't use)

Mix all in food processor and pulse until all mixed. This is s good.

Guacamole

1 avocado
1 teas garlic
1 teas chopped onion
juice of half a lime

Get insides of avocado out and place in food processor with the garlic, onion and lime juice. Pulse until blended and enjoy. you can add tomatoes and peppers too.

Chicken Verde..

This is so easy to make and yummy.. I tried it out on the kids tonight and they loved it. So it is a keeper..

Chicken Verde

4 chicken breast boneless and skinless
1 large jar verde salsa

Place both in crockpot and cook 8 hours on high or 4 on low. Shredded with a fork. I made some rice and baby brussels sprouts.

Pork Tenderloin..

I put this in the crockpot this morning before I left for work. Just made some rice and collards and dinner was ready.


1 tenderloin
1 pk. onion soup mix
1 can cream mushroom soup
Rachael Ray poultry season
water

Cover each side of tenderloin with seasoning. Place in crockpot pour onion soup mix, mushroom soup and cover with water. Cook on high until falls apart. I had a large tenderloin so I cooked it 9 hours on high. It will depend on the size you cook. Normally 4 to 6 hours.


Collards

1 can collards
2 teaspoon olive oil
salt and pepper to taste
3 tablespoons vinegar

Mix all this in a sauce pan and bring to a boil.  Collards really go well with pork..


Cherry Cheesecake...

YUMMMMMMMMY.....

This is what my parents brought me for my birthday yesterday..

Cherry Cheesecake

1 8 oz cream cheese
1 can eagle bran milk
1/4 cup lemon juice
1 can cherry pie filling
1 graham cracker crust

Mix the cream cheese, eagle bran and lemon juice together until smooth. Place in pie crust. Pour cherry pie filling over top of cream cheese mixture. Chill for a few hours and dig in..

Marla's husbands apple dumplings.


This is some good stuff guys. Marla gave me this recipe and said they were awesome and boy was she right.. Thanks Marla and Rick..

Apple Dumplings

2 granny smith apples peeled and cored
2 cans crescent rolls
1 1/2 cup sugar
1 teas. cinnamon
1 cup butter
1 can mountain dew

Preheat oven to 350 and grease a 9x13 baking dish. Cut the apples into 8 wedges. A apple corer works perfect. Separate the crescent rolls into triangles. Place apple in the small end of the roll and roll up and pinch to seal ends. Place into the baking dish. In a small bowl add the melted butter, sugar and cinnamon mix together. Pour over dumplings and pour mountain dew on top. Place in oven for 35 to 45 minutes. Get some vanilla ice cream and enjoy.

Since it's my birthday weekend, I made what I wanted for dinner..

Steak

6 sirloin steaks
1/2 bottle dales marinade
1/ bottle steak sauce
1 teas. Webber Chicago steak seasoning

Place dales, steak sauce and seasoning in a large bowl and place steaks in mixture. Keep rotating steaks while marinating. Leave in marinade for about 10 minutes. Grill until desired doneness. Make a salad and a baked potato and enjoy..

Chicken and Dumplings

I made these for my guys tonight.. So good for such a cold yucky day...

Chicken and Dumplings

1 pk chicken tenders (cooked and shredded)
4 chicken bouillon cubes
2 cans chicken broth
2 can cream chicken soup
2 cans milk (use soup cans)
salt and pepper
4 cans biscuits

Place chicken in broth with bouillon cubes. Bring to a boil. Add milk, soup, salt and pepper. Bring to boil again. Tear biscuit into small pieces and drop into pot. Cook until biscuits are done, usually around 5 to 10 minutes. Will depend on what size you tear the biscuits.

Pulled Pork for dinner..

This is one of our kids favorite meals. I make this and it gets gone as fast as I shredded it..

1 boston butt
1/2 bottle Scotts barbecue sauce
1 teaspoon crushed red pepper flakes

Place Boston Butt in crockpot and sprinkle crushed red pepper flakes on top. Pour Scotts and enough water to cover butt. If you don't have Scotts you can use 1 cup white vinegar, 2 teaspoon hot sauce and red pepper flakes. This is yummy. Make some slaw and baked beans and enjoy.

My Pretty Girl Makayla..


Chicken Broccoli Alfredo Pasta

This is one of my kids favorite meals. It is quick and easy and yummy.. Grab some garlic bread and dig in...

Chicken Broccoli Alfredo Pasta

3 chicken breast
2 teaspoon minced garlic
morton season salt
1 bag broccoli florets
8 oz bow tie pasta
2 cups heavy whipping cream
2 teaspoon butter
1 cup parmesan cheese

Cook chicken with garlic and season salt in a small amount of olive oil until done all the way through. Cut into small pieces. In a separate pot cook broccoli. In a large pot cook pasta until done, around 10 minutes for both pasta and broccoli. When all is done drain pasta and broccoli. In pasta pot add the cream, butter and parmesan cheese. Bring to a boil and boil until desired thickness. Pour pasta, broccoli and chicken in the pasta pot and stir all together and enjoy...

Chicken Tortilla Soup

This is a great dinner for a cool night.

Chicken Tortilla Soup

3 Chicken breast cooked and shredded
3 can chicken broth
1 teaspoon minced garlic
2 tablespoon flour
1 can kidney beans
1 can black beans rinsed
1 cup frozen shoe peg corn
3 cups half and half
1 can cream chicken soup
1 cup salsa (your favorite)
2 teaspoon cumin
1 pk. fajita seasoning
sour cream
8 oz.cheddar cheese shredded
8 oz. pepper jack cheese shredded
tortilla chips

In a large pot place chicken, broth, garlic, flour, beans ,corn, half and half, cream chicken soup, salsa, cumin, and fajita seasoning. Bring to a boil then turn down and simmer for 15 minutes.  Top with cheese and sour cream. Eat with tortilla chips... Enjoy

What's for dinner..

I was in the mood for Mexican food so I made nachos. They were a huge hit at with the kids and quick and easy for me..

Nachos

2 lbs. ground beef
2 pks. taco season
1 can rotel
1 can black beans (rinsed)
1 cup shoe peg corn
2 cups cheddar cheese

Brown and drain ground beef. Add taco season simmer for 3 minutes. In separate pot put beans, rotel and corn, heat for 3 minutes and add to meat mixture. In 3 separate 9x13 pans spread the tortilla shells on bottom. Pour the meat mixture on top and sprinkle cheese all over top. Place in 425 degrees oven and melt cheese. Around 5 minutes and enjoy..
