New Years recipes..

Collards

2 cans of collards
1 tablespoon olive oil
2 tablespoons apple cider vinegar
salt and pepper to taste
1 teaspoon crushed red pepper

Place all together in sauce pot and bring to boil. Simmer for bout 30 minutes or until tender and all flavors have combined together.

Black Eye Peas

2 bags of peas
pieces of pork to season
salt to taste

Place into crockpot and let cook all day until tender..

Pork Chops

8 chops
Scotts barbecue sauce
crushed red pepper

Place chops in a large freezer bag with Scotts and red pepper. Let marinate for 30 minutes or all night. Place in oven and bake 350 for 1 hour of longer if thick.

Cornbread I make per package instructions.. I will post pictures on New Years day of spread.


Banana Pudding Cake

1 box yellow cake mix
2 packages instant banana pudding
4 cups milk
1 can sweeten condensed milk
20 vanilla wafers crushed

Make cake per box instructions in  9x13 baking pan.  When done take out and poke wholes all in cake. In a bowl mix the pudding and milk all together until smooth. Pour over cake. Pour the sweetened condensed milk over the cake too.  Sprinkle the crushed wafers all over cake and enjoy.. You can put spread whipped topping on cake after it cools and then sprinkle wafers on top if you prefer. Keep refrigerated.

Brunch Casserole..

This time of the year is a very hectic for me at work. So I have made a brunch casserole for them tomorrow since they will be out of school. 

1 pd. sausage 
1/4 cup flour
2 tablespoon parmesan cheese
3 cups cheddar cheese
3 cups milk
salt and pepper to taste
1 large bag of hash browns

Cook sausage and crumbled into small pieces, cook for about 5 minutes.  Add flour and parmesan cheese and stir for about a minute. Add milk, salt and pepper and stir until gets thick. Butter a 9x13 pan and place the hash browns in the bottom of dish. Sprinkle half of the cheese over the hash browns. Pour milk mixture over top and sprinkle rest of cheese onto and bake for 45 minutes and dig in.

Orange creamsicle fudge

Awesome gift idea..  My mom is the queen of fudge making..

3 cup sugar
1 1/2 stick margarine
1 small can cream
12 oz bag white chocolate chips
1 jar marshmallow cream
3 teaspoon orange extract
5 drops yellow food coloring
3 drops red food coloring


Bring sugar,margarine and milk to a full boil. Stirring constantly.. Remove from heat and add white chocolate morsel and marshmallow cream and mix well. Pour into buttered baking dish lined with wax paper.

Peppermint Bark..

This is very easy and a great gift idea..

1 pk. white almond bark
1 pk peppermint candy canes

Melt bark until smooth. Pour onto wax paper and spread out. Crush up your candy canes and sprinkle all over bark. Let set up and break into pieces. You can place these is cute treat bags or jars if you want to give as a gift..

Crockpot Chocolate Candy..

This is super easy and a awesome gift..

2 lb. salted dry roasted peanuts
4 oz. German sweet chocolate
1 24 oz. semi sweet chocolate chips
2 lb. white almond bark

Super Easy.. Layer in crock pot peanuts, German chocolate, semi sweet chocolate and almond bark. Put lid on cook on low for 3 hours. Don't stir until 3 hours is up. Then stir all together. Place into cupcake wrappers and let firm.

Pineapple Coconut Snowballs

1 8 oz cream cheese softened
1 8 oz can crushed pineapple well drained
1 3 oz box pineapple jello
2 1/2 cups coconut

Mix cream cheese and pineapple together. Cover and refrigerate for 30 minutes. Then roll into balls and roll in coconut. These are easier  to make when they are firmer. Store in refrigerator.

Cinnamon Honey Butter..


This is a awesome butter to use with the Banana bread and Pumpkin Breads.

Cinnamon Honey Butter

1/2 cup butter softened
1/2 cup confectioners sugar
1/2 cup honey
1 teas. cinnamon

In a bowl combine butter, sugar, honey and cinnamon. Beat until light and fluffy... Place in a cute container or or in a roll with plastic wrap, tie ribbons ends and place with loaf in a nice bag or basket..  


Pumpkin bread..

This is another Holiday much have at our house... It also makes a great gift.. P


Pumpkin Bread..

3 1/2 cups all purpose flour
2 cups packed dark brown sugar
2/3 cups white sugar
2 cups pumpkin puree
1 cups oil
2/3 cup coconut milk
2 teas. baking soda
1 teas. salt
1 1/2 teas. cinnamon
2/3 cup coconut
1 cup walnuts chopped opt.


Mix all ingredients together and place in loaf pans. You can make 3 from this recipe. Bake at 350 for 1 hour and 15 minutes..

Banana Bread..

I love to give special friends something that I have made. I think it shows that they are special by the fact that you took the time to make something for them.. Simply things mean the most...

Banana bread

3 to 6 bananas mashed
2 eggs
2 cups sugar
1/2 cup oil
2 teas. vanilla
2 cups self rising flour
1/2 cup nuts chopped  pecans or walnuts

Mix all ingredients together and pour into a greased loaf pan. This recipes makes 2 loaves. Bake at 350 for 50 minutes. These freeze well so that you can make then ahead of time...

Treats for my coworkers...

Winter wonderland bars
Mounds bars
Coconut orange balls
Sugar plum balls


Winter wonderland bars and Mounds bars recipes are already posted for you guys to enjoy.

Coconut orange balls

1- 12oz box vanilla wafers crushed
4 cups sifted confectionary sugar
1 stick butter softened
1 6oz can frozen orange juice
1 cup pecans chopped
1 cups coconut

Mix vanilla wafers, sugar, butter, orange juice together until mixed well.Roll into small balls and roll in coconut or pecans.



Sugar plum balls

1can eagle bran
2- 3 oz pks. Strawberry jello
1 1/2 cups coconut
1 1/2 cups graham crackers crumbs

Mix eagle bran,1 box jello,coconut and graham cracker crumbs together.
Form into small balls and roll in 2 Box of jello..

Since we have had a big day of Christmas decorating and now watching Christmas movies. I made us some pulled pork for dinner. I just let it cook all day in the crock pot while we enjoyed our decorating... Recipe already posted for you guys to enjoy..

Coming this weekend...

Time to put the Christmas decorations up and make treats for my coworkers..  We make a day of the decorations at our house. We decorate the house inside and out and I make dinner and lots of cookies and hot chocolate. We watch Christmas movies and eat popcorn and just enjoy the season. 
I will be posting pictures of the decorations and the goodies I'm making.  I will post the recipes of orange coconut balls, sugar plum drops, winter wonderland bars and mounds bars.. I make treats every year for my coworkers as my gift to them.  I think food gifts show that they are all special to me...

Chocolate Cake..

With all there pumpkin pies and sweet potato pies we all wanted something chocolate. So I found this recipe and it was yummy and easy..

2 cups white sugar
1 3/4 cup all purpose flour
3/4 cup unsweeetened  cocoa
1 1/2 teas. baking powder
1 1/2 teas. baking soda
1 teas. salt
2 eggs
1 cup milk
1/2 cup veg. oil
2 teas. vanilla
1 cup boiling water

Mix all ingredients into one large bowl.  Mix well for two minutes. Pour into greased baking dish 9x13 and bake for 30 to 35 minutes at 350.  

Icing 
4 table butter
1/2 cup brown sugar
2 table. milk
1 1/2 cup confectionary sugar
1 table. cocoa
1 teas. vanilla

In sauce pan melt butter and brown sugar together until dissolved. Stir in cocoa and confectionary  sugar mix all together and add vanilla. Stir until thick enough to pour well and pour over cake..  It it gets to thick add a little more milk..

My sister in law, brother in law, niece and nephew are coming over today for Thanksgiving. Since we have all eaten the traditional foods already, I have decided to just make some other yummy foods.

My make ahead dishes..

Pumpkin pie, sweet potato pie, deviled eggs and sweet potato casserole. I have already posted these recipes for you guys..

Moms Yummy Cheese ball..

This is a must at our house at the holidays. My mom make these and everyone loves them.

1 8 oz cream cheese
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/2 cup purple onion
1 package of budding ham chopped
2 cups cheddar cheese

Mix all ingredients together and form into a ball. I love woven wheat baked crackers with these, but you can use your favorite crackers...

Things to snack on before the Turkey is ready...

I don't know about you guys but at my house someone is always hungry. So I like to make a few things for everyone to snack on before the meal is ready.  Here are a few of my holidays ideas..


Fruit Cheese Ball

1 8 oz cream cheese softened
1 8 oz can crushed pineapple drained
1 lg. box  instant vanilla pudding
1 jar of maraschino cherries drained and sliced
1/2 cup chopped pecans


Mix the cream cheese, pineapple, vanilla pudding, cherries together well. Form into a ball and roll in the crushed pecans and refrigerate until ready to serve.  I like to use graham crackers or teddy grahams with this...

Getting ready for turkey day...

Tomorrow at our house we have a very busy day ahead of us.. I will be making everything that I can ahead of time for Thursday..  I will will making our dressing, cheese balls, sweet potato casserole, pumpkin pies, sweet potato pie and defrosting my frozen cranberry salad and turkey.  I will be posting pictures of these and recipes of the cheese balls that I haven't  posted. I will also be cleaning my house and getting all my platters out and ready.

This is a very quick and easy budget friendly recipe.

1chicken breast boiled and shredded
2 cans mixed vegetables drained
2 cans cream of chicken soup
1 box stuffing mix
1/2 stick butter
1 1/2 cup water


Shred chicken and mix with vegetables and soup. Pour into a 9x13 baking dish. Place the stuffing in a microwave safe bowl with butter and water and cook for 5 minutes.  Fluff stuffing and place on top of mixture and bake for 25 to 30 minutes. Grab some rolls and dig in guys..

Easy Pumpkin Cake...

 This is the easiest cake you will ever make and it is awesome..



Easy Pumpkin Cake

1 18.25 oz box spice cake mix
1 15 oz can pumpkin


Mix together and bake at 350 for 25 to 30 minutes. You can bake in 9x13 or bundt pan.  You can put cream cheese icing on it too if you like icing on your cake.  I actually greesed a bundt pan and sprinkled sugar and cinnamon in bottom.. 


cream cheese icing

1 stick softened butter
1 8 oz cream cheese
4 cups confectioner sugar
1 teas. vanilla

Mix all together with blender until smooth.
