Chocolate Cake..

With all there pumpkin pies and sweet potato pies we all wanted something chocolate. So I found this recipe and it was yummy and easy..

2 cups white sugar
1 3/4 cup all purpose flour
3/4 cup unsweeetened  cocoa
1 1/2 teas. baking powder
1 1/2 teas. baking soda
1 teas. salt
2 eggs
1 cup milk
1/2 cup veg. oil
2 teas. vanilla
1 cup boiling water

Mix all ingredients into one large bowl.  Mix well for two minutes. Pour into greased baking dish 9x13 and bake for 30 to 35 minutes at 350.  

Icing 
4 table butter
1/2 cup brown sugar
2 table. milk
1 1/2 cup confectionary sugar
1 table. cocoa
1 teas. vanilla

In sauce pan melt butter and brown sugar together until dissolved. Stir in cocoa and confectionary  sugar mix all together and add vanilla. Stir until thick enough to pour well and pour over cake..  It it gets to thick add a little more milk..

Coming today..

My sister in law, brother in law, niece and nephew are coming over today for Thanksgiving. Since we have all eaten the traditional foods already, I have decided to just make some other yummy foods.

My make ahead dishes..

Pumpkin pie, sweet potato pie, deviled eggs and sweet potato casserole. I have already posted these recipes for you guys..

Moms Yummy Cheese ball..

This is a must at our house at the holidays. My mom make these and everyone loves them.

1 8 oz cream cheese
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/2 cup purple onion
1 package of budding ham chopped
2 cups cheddar cheese

Mix all ingredients together and form into a ball. I love woven wheat baked crackers with these, but you can use your favorite crackers...

Things to snack on before the Turkey is ready...

I don't know about you guys but at my house someone is always hungry. So I like to make a few things for everyone to snack on before the meal is ready.  Here are a few of my holidays ideas..


Fruit Cheese Ball

1 8 oz cream cheese softened
1 8 oz can crushed pineapple drained
1 lg. box  instant vanilla pudding
1 jar of maraschino cherries drained and sliced
1/2 cup chopped pecans


Mix the cream cheese, pineapple, vanilla pudding, cherries together well. Form into a ball and roll in the crushed pecans and refrigerate until ready to serve.  I like to use graham crackers or teddy grahams with this...

Getting ready for turkey day...

Tomorrow at our house we have a very busy day ahead of us.. I will be making everything that I can ahead of time for Thursday..  I will will making our dressing, cheese balls, sweet potato casserole, pumpkin pies, sweet potato pie and defrosting my frozen cranberry salad and turkey.  I will be posting pictures of these and recipes of the cheese balls that I haven't  posted. I will also be cleaning my house and getting all my platters out and ready.

This is a very quick and easy budget friendly recipe.

1chicken breast boiled and shredded
2 cans mixed vegetables drained
2 cans cream of chicken soup
1 box stuffing mix
1/2 stick butter
1 1/2 cup water


Shred chicken and mix with vegetables and soup. Pour into a 9x13 baking dish. Place the stuffing in a microwave safe bowl with butter and water and cook for 5 minutes.  Fluff stuffing and place on top of mixture and bake for 25 to 30 minutes. Grab some rolls and dig in guys..

Easy Pumpkin Cake...

 This is the easiest cake you will ever make and it is awesome..



Easy Pumpkin Cake

1 18.25 oz box spice cake mix
1 15 oz can pumpkin


Mix together and bake at 350 for 25 to 30 minutes. You can bake in 9x13 or bundt pan.  You can put cream cheese icing on it too if you like icing on your cake.  I actually greesed a bundt pan and sprinkled sugar and cinnamon in bottom.. 


cream cheese icing

1 stick softened butter
1 8 oz cream cheese
4 cups confectioner sugar
1 teas. vanilla

Mix all together with blender until smooth.


Chicken for those of you who don't like turkey...

Lemon Lime Soda can Chicken

1 whole chicken
 Butter
Creole season butter injector  
Weber beer can chicken season
1 can lemon lime soda


Wash and clean out inside of chicken. Inject the amount you would like into chicken with creole butter injector. Rub butter all over chicken and pat beer can chicken season all over. Open lemon lime soda and place chicken on it so that it stands up.  Bake at 400 degrees for 2 hours or grill for 2 hours.

Peanut Butter Pie..

Peanut Butter Pie

1 c. creamy peanut butter
1 8 oz. cream cheese
1/2 c. sugar
1 12 oz. cool whip thawed and stirred
1 chocolate piecrust
1 11.75 oz. jar of hot fudge sauce


Mix together first three ingredients on medium with mixer. Mix in 3 cups cool whip then spoon mixture into piecrust. Spread hot fudge sauce over pie saving 2 tablespoons to put on top. Refrigerate over night and spread rest of cool whip over top. Place 2 tablespoons hot fudge sauce in a plastic storage bag cutting a whole in end and drizzle over pie and some peanut butter in another plastic storage bag and do the same and go in different directions.

Peanut Butter Brownie Cups..

Peanut Butter Brownie Cups

1 19 oz. box brownie mix
18 mini peanut butter cups
1 10 oz. bag of butterscotch morsels or peanut butter morsels
3 tbs. heavy whipping cream



Preheat oven to 350 degrees. Make brownie mix according to package instructions. Place cupcake holders in the cupcake pan and spoon brownie mix into the holders. Add peanut butter cups and put more brownie mix on top to cover it up. Bake 20 to 25 minutes and let cool. Combine morsels and cream over medium to low heat stirring often. Spread over brownie cupcakes and enjoy.

Butterfinger Cake..

Butter Finger Cake


1 box 16.5 oz. devils food cake mix
1 can eagle bran milk
1 jar caramel ice cream toping
1 12 pack of mini butter fingers, crushed



Make cake mix as package directions.  Stir in 6 of the crushed butter fingers into the batter and bake.  When done take out and with a wooden spoon poke wholes in cake all over. Pour eagle bran all over cake filing the holes. Add the caramel ice cream topping. Then add the other 6 butter fingers all over the top.   You can use cool whip as another layer if you like.  Bake on 350 degrees for 25 to 30 minutes 


Winter Wonderland Bars...

Winter Wonderland Bars


1 stick of butter
1 c. graham cracker crumbs
1 c. milk chocolate chips
1 c. butterscotch chips
1 c. coconut
1 c. chopped pecans
1 can eagle bran




Spray a 9x13-baking dish with cooking spray. Melt a stick of butter and place in bottom of pan. Start the layering process graham crackers, chocolate chips, butterscotch chips, coconut, pecans and spread the eagle bran milk over top. Bake 25 minutes at 350 degrees.

Mounds Bars..

 Here are some of my favorite chocolate desserts for the Holidays...

Mounds Bars

2 c. graham cracker crumbs
1/4 c. white sugar
1/2 c. melted butter
1 can eagle bran milk
2 c. coconut 
1 - 12 oz. package semisweet chocolate chips melted



Combine crumbs, sugar and butter. Mix and pat in pan and bake 15 minutes. Mix milk, coconut and spread over crumbs bake 15 minutes. Spread melted chocolate on top and cool.

Monkey Bread..

 My kids wanted a snack this evening. It is a perfect night to heat up the house with the oven and the smell from this is yummy...

Monkey Bread

3/4 c. white sugar
1/2 tsp. cinnamon
3 cans of biscuits
1 c. brown sugar
1 stick butter melted


Mix white sugar, cinnamon together and put in a bowl. Take 15 biscuits and tear them into half. Coat them completely in the cinnamon sugar mixture. Place in a bunt pan. Then mix the brown sugar, butter sprinkle over the biscuits in the pan already. Then get the other 15 biscuits and coat in the cinnamon sugar mixture like before place in pan too. Then repeat the brown sugar and butter mixture over them too. Add all extra ingredients to biscuits and bake 375 for 20 to 25 minutes.  


Grocery List for Banana Pudding, orchard punch and deviled eggs..

eggs
mayo
mustard or dijon mustard
salt
white vinegar
2 can sweetened condensed milk
2 boxes vanilla wafers
8 to 10 bananas
1 can cream
2  2 litter ginger al
1 32 oz cranberry juice
1 32 oz apple juice
2 frozen orange juice concentrate
apple
orange


Banana Pudding...

This is the best banana pudding you will ever taste. This recipe came from my mom Yvonne and she got it from her grandma. 

Grandmas Banana Pudding

4 whole eggs (room temperature)
2 lg. cans Evaporated milk
2 cans eagle bran milk
2 boxes of vanilla wafers
8 or 10 bananas (ripe)


Place all the above into a double boiler on medium heat. Mix each ingredient as added.
Stir every little bit until the mixture thickens. Be sure to scrape the sides of the double boiler. It takes a good while for this to thicken. While the above is cooking layer a 9x13 pan with a layer of vanilla wafers. Then a layer of bananas till the pan is full ending with vanilla wafers. 

The recipe is a double batch. But only make 1 batch at a time. If you want a smaller pudding cut ingredients in half. 




Deviled Eggs..

Deviled Eggs are a must at Holidays and family get gatherings. I think everyone loves them.


Deviled Eggs

6 eggs boiled 
2 tbs. mayonnaise
1 tsp. white vinegar
1 teas. Dijon mustard
1/2 tsp. salt
Paprika opt.


Peel eggs and cut in half. Take centers out and place in a bowl. Add mayonnaise, mustard, vinegar and salt and mix together. Spoon the mixture back into the egg halves and sprinkle with paprika. 



Orchard Punch..

This is a punch that my daughter Makayla found. It is a great punch for Thanksgiving...


Orchard Punch


1 32 oz. apple juice
1 32 oz. cranberry juice
1 12 oz. can of frozen concentrated orange juice
1 2-liter Ginger ale 
1 med apple
1 med orange




Mix all ingredients together in a punch bowl or a beverage dispenser. I prefer a beverage dispenser for this punch. Cut the apple and the orange into slices and place in punch. It makes a pretty punch

5 lb bag potatoes
2 can chicken broth
butter
1 8 oz cream cheese

2 cups sharp cheese
garlic powder
onion powder
salt and pepper
milk
8 oz box macaroni noodles
1 lg. can cream
eggs
cornmeal
1 can biscuits
green onions
1 can cream celery soup
1 can cream chicken soup
poultry season
1 chicken breast
flour

Crock Pot Mash Potatoes

These are awesome!!  I made these for Thanksgiving this year to try on everyone. Everyone loved them. There was not even a speck to eat with leftovers. I will be making these from now on at holidays. 


Crock Pot Cheesy Mash Potatoes


5 lbs. potatoes peeled and quartered
1 1/2 c. chicken broth
1/4 c. butter cut into chunks
1 - 8 oz. cream cheese softened
1 c. shredded cheddar cheese
1 tsp. garlic powder
1 tsp. onion powder
2 tsp. salt 
1/2 tsp. pepper
1/2 to 1 cup warmed milk

Add potatoes to crock pot with broth and butter. Cook 4 to 4 1/2 hours.
Then add all remaining ingredients and mash. Put crock-pot on keep warm until ready to serve. For weekdays you can boil potatoes on stove and add ingredients and mash. These are just as good.


Crock Pot Macaroni and Cheese

Crock Pot Macaroni And Cheese


8 oz. cooked and drained macaroni noodles
1 lg. can evaporated milk
1 1/2 c. milk
2 c. sharp cheddar cheese
2 c. cheddar cheese
1/4 c. butter
2 eggs
salt and pepper to taste



Cook and drain noodles. Grease sides of crock-pot with butter add all ingredients and stir. I like to save a little of the cheese for on top.  Cook on high for 2 hours or low for 3 to 4 hours.  

Aunt Pauline's dressing..

A good many years ago my mother-in-law asked me to make the dressing for our Thanksgiving dinner. I had never made dressing before in my life.  So I started looking at recipes and this is what I came up with. And needless to say per my family this is a must every Thanksgiving now.

Paulines  Dressing and gravy

1 cake of cornbread crumbled
1 can biscuits cooked and crumbled
1 tbs. butter
1 c. green onions chopped
1 can cream of celery soup
poultry season to taste
salt and pepper to taste
1 can cream chicken soup
1 chicken breast cooked and shredded 
1 can chicken broth

Saute chopped onions in butter until tender.
Mix cornbread,biscuits,soups, poultry seasoning, salt and pepper, shredded chicken together and if not moist enough you can add a little milk. 
Bake 350 degrees for 30 minutes.

gravy

2 boiled eggs chopped
broth from chicken breast 
1/4 cup flour
salt and pepper to taste

Mix the broth, flour, salt and pepper and whisk until thickness is desired. add eggs and chicken last and stir.

Pepperoncini meat sandwiches..
 1 roast ( I used a Sirloin) I found on sale
1 jar pepperoncini peppers
 italian seasonings
 garlic salt
1 tablespoon worcestershire sauce
 water or beef broth

 Season both sides of the roast with italian seasonings and garlic salt. Pour enough water to cover the roast half way. Add worcestershire to water. Pour the jar of pepperoncini peppers with liquid into slow cooker and let cook until roast falls apart. Usually around 5 hours.

Thanksgiving recipes and grocery list continued..

Today I am posting pumpkin pie and Sweet potato casserole. These are a must at the holidays at our house..

 Pumpkin Pie

1 unbaked pie crust
1  15oz can pumpkin
1 can sweet condensed milk
2 eggs
2 teas. Pumpkin pie spice
1/2teas. Salt

Mix together all ingredients until blended. Pour into pie crust and bake 425 for 15 minutes. Reduce heat to 350 for 35 to 40 minutes.

Sweet Potato Casserole...

2 lbs. sweet potato's mashed
2 eggs
1 1/2 cup sugar
1/4 cup butter
1/3 cup sweet condensed milk
1 cup  crushed frosted flakes
1/2 chopped pecans
1/4 cup butter
2 tables. Brown sugar

Mix sweet potato's, eggs, 1/4 cup butter, sugar  and sweet condensed milk together. Place in 9x13 baking dish.  Mix brown sugar, 1/4 cup butter and pecans together. Sprinkle on top of sweet potato mixture.Add crushed frosted flakes to top and bake at 350 for 30 minutes..

1 2 lb. can sweet potato's
Eggs
Sugar
Butter
2 cans Sweeten condensed milk
Frosted flakes
Pecans
Brown sugar
1 15 oz can pumpkin
Pumpkin pie spice
Unbaked pie crust

Coconut macaroons...

A friend of ours isn't feeling well so I made these for I'm to cheer him up..


Coconut Macaroons

1 medium bag coconut
1 can sweet condensed milk
1 teas. vanilla flavoring
1/2 teas coconut flavoring

Mix all together and spoon out on baking sheet by teaspoonfuls. Bake at 350 for 15 minutes. Yummy..



Cranberry Salad..

I got this recipe years ago from Joan, my stepsons grandmother.  This recipe is awesome and is a must at our house during the holidays now. I like to make this a few weeks before Thanksgiving and freeze it. It freezes very well and is ready when you need it..

Cranberry Salad

1 bag of cranberries
1 large orange
4 medium apples  ( your preference) 
1 lg. box cherry jello
3 cups hot water
1 lg. can crushed pineapple
1 cup pecans chopped
1 1/2 cups sugar

Place cranberries in food processor  and grind. Peel and dice apples and place into food processor and grind. Peel orange and grind in food processor too. When cranberries, apple and orange are all ground together take out and place into a freezer container. Add cherry jello , hot water, sugar, pineapples and pecans, stir all together and freeze..


Thanksgiving grocery list and recipes to start..


I am going to start giving you my Thanksgiving recipes with groceries list a few a day until you guys have them all. I'm going to start with The Turkey, ham and cranberry salad.



Turkey
Creole injector
butter 
salt and pepper


Thaw turkey for a few days in refrigerator. Wash and pat dry. Inject with creole injector and spread butter all over turkey. I add salt and pepper to the butter.  
I like to cook our turkey in the butterball electric fryer. I don't fry a lot but this I make a exception and it is awesome.  


Ham
I like to just bake my ham without glaze. A lot of people like glazes and I do have a few ham glazes posted for you guys already to use if you like glazes on your ham.

Thanksgiving.....

With the holidays just around the corner, it is time to start getting prepared. I like to start a few weeks ahead with the preparation's.  I like to be able to enjoy my holidays with my family and have a awesome meal for them in the process. It can get overwhelming with all that has to be done. So I'm going to try to help make things easier for you guys this year. So over the next couple weeks, I am going to share my planning.. I'm going to start by sharing my menu with you guys. I will be sharing my grocery list, make ahead items and of course recipes with you. Yummy Pumpkin Bread..

This bread is very good in the fall. As soon as I start seeing pumpkins I want to bake this bread. It is very moist and yummy...


 Super Moist Pumpkin Bread

 3 1/2 c. all purpose flour
2 c. packed dark brown sugar
 2/3 c. white sugar
2 c. pumpkin puree
1 c. veg. oil
 2/3 c. coconut milk
 1 c. toasted walnuts chopped
 2 tsp. baking soda
 1 tsp. salt
1 1/2 tsp. cinnamon
 2/3 c. coconut

 Mix all ingredients together and fold in the walnuts and coconut last. Bake in a 9x13-baking dish for 1 hour 15 minutes for 45 minutes. I like to put cream cheese icing on this bread.

I wanted to put this recipe back out for you guys. This soup is awesome..

Broccoli Cheddar Cheese Soup


1 - 16 oz. bag broccoli
1 - 14.5 oz. can of sliced carrots
2 - 15 oz. cans of sliced potatoes
1 med onion, chopped
1 can cream of celery soup
1 can cream of chicken soup
1 can of nacho cheese soup
1 - 2 lb. block of cheese cubed into pieces
2 cans of chicken broth 


Combine all ingredients into a slow cooker. Cook on high for 2 hours. Serve with Hawaiian rolls or sour dough bread.

Mandarin Orange Cake..

This is a cake that I came up with a few summers ago. It turned out so well that it is a must with my kids.

Mandarin Orange Cake

1 box orange cake mix
2 lg. cans mandarin oranges
1 can sweetened condensed milk
1 container cream cheese icing

Make cake per instructions on box except use the mandarin orange juice instead of the water. Also mix a can of the oranges in wit the cake batter. Bake per instructions in a 9x13 baking dish. Usually 350 for 35 minutes.  Take out and poke wholes in cake with a wooden spoon. Pour sweetened condensed milk over cake. Then add the other can of oranges drained to icing and spread on cake.

I make my own icing but you can use the already made ones if you like.

Cream cheese icing..
4 cups powered sugar
1 8 oz cream cheese
1 stick butter
1 teas. vanilla

Mix all together and its ready...

Pumpkin Cheesecake....

I am trying recipes for the holidays. This is a keeper...


Pumpkin Cheesecake

1 8 oz. cream cheese softened
1 c. canned pumpkin puree
1 can eagle bran milk
1/2 c. sugar
1 3 oz. pkg. of instant vanilla pudding or cheesecake instant
2 tsp. pumpkin pie spice
1 graham cracker piecrust



Mix cream cheese, pumpkin, eagle bran milk, sugar, pudding, and pumpkin pie spice.  Mix well and place in graham cracker piecrust. Keep refrigerated.  


Whats for dinner...

 These are awesome and so easy to make. I put them in the slow cooker, before I left to go to church this morning. They are done and I got some really some soft buns to use with them..


Pepperoncini Meat Sandwiches

1 roast ( I used a Sirloin) I found on sale
1 jar pepperoncini peppers
italian seasonings
garlic salt
1 tablespoon worcestershire sauce
water or beef broth

Season both sides of the roast with italian seasonings and garlic salt. Pour enough water to cover the roast half way. Add worcestershire to water. Pour the jar of pepperoncini peppers with liquid into slow cooker and let cook until roast falls apart. Usually around 5 hours.
