I dont know about you guys, but after all the Holiday foods. I want some spicy Mexican food.....  This is my favorite thing in the world to eat.... These are so good...

2 pks. taco season
1 teas. cumin
1 cup taco sauce
1 can of refried beans
1 can black beans
1 bag tortilla chips or nacho chips

jalapenos
black olives
sour crean
tomatoes
lettuce
salsa

Cook and drain ground beef. Add taco season, cumin and taco sauce. Simmer for a couple minutes.  Heat beans of choice. I do both kinds. Place chips in a big bowl. Layer with beans, lettuce, tomatoes, jalapeƱos, olives, sour cream and cheese. Add salsa when ready to eat. That is what I do anyway. You can layer in any order you like and add any topping you like.....

Mexican Rice

This is something I came up with one day when I was making tacos. I wanted beans and rice to go with my tacos. So I opened a can of refried beans and black beans. But plain white rice wasn't cutting it for me. And this is what I came up with......

2 cups rice white
3 chicken broth
1 cup water
1 cup my salsa (recipe on post before)
1 teas. cumin
a few chopped cilantro leaves

Cook rice in water and chicken broth. After its done add the salsa and cumin. Top with cilantro leaves..

Egg Salad

There is lots of Easter eggs to do something with, after you hide them all. If they are not to beat up to use. :)  Most of us use the plastic ones to hide and leave the real dyed ones in the house. That way they are ok to use to eat later and we are not wasting them.

12 boiled eggs peeled and chopped
4 tablespoon mayo
1 teas. white vinegar
1 teas dijon mustard
salt and pepper to taste

Make sure that you cut the dye off the eggs, if it has went through to the whites. Chop up the eggs and place in a bowl. Add mayo, vinegar and mustard. Stir all together and put on wheat bread or crescent rolls or whatever kind of bread you prefer.. You can add pickle relish to these if you like.

Happy Easter Everyone!!!!!

Ham and Cheese Hawaiian Rolls

We all are usually so tired of all the holiday foods by the end of the day. But we still have lots of leftovers to eat. So here are a few of my ideas to use the leftovers and not waste food. This is a awesome recipe to use the leftover ham and hawaiian rolls. I love these and so do my kids..

1 8 oz cream cheese softened
2 teas. onion powder
1 stick butter melted
2 tablespoon parmesan cheese
2 teas. worcestershire sauce
1 pk hawaiian rolls
left over ham
2 cups of shredded swiss or mozzeralla or gruyere cheese
1 teas. poppy seeds

Slice the rolls in half. Mix cream cheese and onion powder together. Spread on the top side of rolls.    On bottom side place ham and cheese and place tops back on.  Melt butter and add parmesan cheese, worcestershire sauce and poppy seeds to butter and pour it over the rolls. Bake 20 minutes covered with foil on 350. Then uncover and bake 5 more minutes to brown. Enjoy and watch them disappear....

Grandma's Banana Pudding

I wanted to put this out here before Easter, just incase any of you are looking for a awesome banana pudding recipe. This was my great grandmothers recipe and has been passed down to my Mom and I. So I am going to share it with all of you... It is the best banana pudding you will ever eat. No joke!!!

2 whole eggs ( room temp) beat together
1 cans evaporated milk
1 cans eagle bran
1 boxes of vanilla wafers
4 or 6 banana's ripe

In a double boiler on medium heat. Add the eggs, evaporated milk and eagle bran. Stir after each ingredient. Stir and scrape sides of double boiler. This needs to thicken to look like a pudding. It takes a good while for this to thicken. While the above is cooking layer a 9x13 pan with a layer of wafers and banana's. Keep layering until the pan is full, ending in wafers.  When this is the desired thickness pour over wafers and banana's. Let cool and refrigerate. You will love this recipe.....

If you don's have a double boiler, you can get a smaller pot and place it over a larger pot full of water. Make sure it doesn't run out of water.

Coming this Summer.....

My dad came from a large family that always had a huge garden every summer. My grandparents, aunts and uncles canned and froze vegetables all summer long. By doing this they had lots of vegetables to last them through the winters and saved them a lot of money. My dad still has a garden every summer and he has a serious green thumb. As you will see as we follow his garden grow this summer. I will be sharing some family canning recipes, freezing tips and ways to save you money on your grocery bills this winter by stocking up..... This is so much easier than you think....

Rita's Cream Cheese Bars

This recipe was given to me by a friend. These are so good and you can't just eat one.

Rita's Cream Cheese Bars

1 cup sugar
2 pk. Cream cheese softened
2 pk. Crescent rolls
1 1/2 teas. Vanilla
1 stick butter melted
1/2 cup sugar
2 teas. Cinnamon

Grease a 9x13 pan. Pat out 1 pack of the crescent rolls in the pan.  Mix sugar, vanilla and cream cheese together. Spread on rolls. Mash second pack of crescent rolls to top of mixture.  Pour butter over top and take the other 1/2 cup sugar and cinnamon and sprinkle all over top. Bake for 30 minutes at 350.
