Getting ready for turkey day...

Tomorrow at our house we have a very busy day ahead of us.. I will be making everything that I can ahead of time for Thursday..  I will will making our dressing, cheese balls, sweet potato casserole, pumpkin pies, sweet potato pie and defrosting my frozen cranberry salad and turkey.  I will be posting pictures of these and recipes of the cheese balls that I haven't  posted. I will also be cleaning my house and getting all my platters out and ready.

This is a very quick and easy budget friendly recipe.

1chicken breast boiled and shredded
2 cans mixed vegetables drained
2 cans cream of chicken soup
1 box stuffing mix
1/2 stick butter
1 1/2 cup water


Shred chicken and mix with vegetables and soup. Pour into a 9x13 baking dish. Place the stuffing in a microwave safe bowl with butter and water and cook for 5 minutes.  Fluff stuffing and place on top of mixture and bake for 25 to 30 minutes. Grab some rolls and dig in guys..

Easy Pumpkin Cake...

 This is the easiest cake you will ever make and it is awesome..



Easy Pumpkin Cake

1 18.25 oz box spice cake mix
1 15 oz can pumpkin


Mix together and bake at 350 for 25 to 30 minutes. You can bake in 9x13 or bundt pan.  You can put cream cheese icing on it too if you like icing on your cake.  I actually greesed a bundt pan and sprinkled sugar and cinnamon in bottom.. 


cream cheese icing

1 stick softened butter
1 8 oz cream cheese
4 cups confectioner sugar
1 teas. vanilla

Mix all together with blender until smooth.


Chicken for those of you who don't like turkey...

Lemon Lime Soda can Chicken

1 whole chicken
 Butter
Creole season butter injector  
Weber beer can chicken season
1 can lemon lime soda


Wash and clean out inside of chicken. Inject the amount you would like into chicken with creole butter injector. Rub butter all over chicken and pat beer can chicken season all over. Open lemon lime soda and place chicken on it so that it stands up.  Bake at 400 degrees for 2 hours or grill for 2 hours.

Peanut Butter Pie..

Peanut Butter Pie

1 c. creamy peanut butter
1 8 oz. cream cheese
1/2 c. sugar
1 12 oz. cool whip thawed and stirred
1 chocolate piecrust
1 11.75 oz. jar of hot fudge sauce


Mix together first three ingredients on medium with mixer. Mix in 3 cups cool whip then spoon mixture into piecrust. Spread hot fudge sauce over pie saving 2 tablespoons to put on top. Refrigerate over night and spread rest of cool whip over top. Place 2 tablespoons hot fudge sauce in a plastic storage bag cutting a whole in end and drizzle over pie and some peanut butter in another plastic storage bag and do the same and go in different directions.

Peanut Butter Brownie Cups..

Peanut Butter Brownie Cups

1 19 oz. box brownie mix
18 mini peanut butter cups
1 10 oz. bag of butterscotch morsels or peanut butter morsels
3 tbs. heavy whipping cream



Preheat oven to 350 degrees. Make brownie mix according to package instructions. Place cupcake holders in the cupcake pan and spoon brownie mix into the holders. Add peanut butter cups and put more brownie mix on top to cover it up. Bake 20 to 25 minutes and let cool. Combine morsels and cream over medium to low heat stirring often. Spread over brownie cupcakes and enjoy.

Butterfinger Cake..

Butter Finger Cake


1 box 16.5 oz. devils food cake mix
1 can eagle bran milk
1 jar caramel ice cream toping
1 12 pack of mini butter fingers, crushed



Make cake mix as package directions.  Stir in 6 of the crushed butter fingers into the batter and bake.  When done take out and with a wooden spoon poke wholes in cake all over. Pour eagle bran all over cake filing the holes. Add the caramel ice cream topping. Then add the other 6 butter fingers all over the top.   You can use cool whip as another layer if you like.  Bake on 350 degrees for 25 to 30 minutes 


Winter Wonderland Bars...

Winter Wonderland Bars


1 stick of butter
1 c. graham cracker crumbs
1 c. milk chocolate chips
1 c. butterscotch chips
1 c. coconut
1 c. chopped pecans
1 can eagle bran




Spray a 9x13-baking dish with cooking spray. Melt a stick of butter and place in bottom of pan. Start the layering process graham crackers, chocolate chips, butterscotch chips, coconut, pecans and spread the eagle bran milk over top. Bake 25 minutes at 350 degrees.
