New Years recipes..

Collards

2 cans of collards
1 tablespoon olive oil
2 tablespoons apple cider vinegar
salt and pepper to taste
1 teaspoon crushed red pepper

Place all together in sauce pot and bring to boil. Simmer for bout 30 minutes or until tender and all flavors have combined together.

Black Eye Peas

2 bags of peas
pieces of pork to season
salt to taste

Place into crockpot and let cook all day until tender..

Pork Chops

8 chops
Scotts barbecue sauce
crushed red pepper

Place chops in a large freezer bag with Scotts and red pepper. Let marinate for 30 minutes or all night. Place in oven and bake 350 for 1 hour of longer if thick.

Cornbread I make per package instructions.. I will post pictures on New Years day of spread.


Banana Pudding Cake

1 box yellow cake mix
2 packages instant banana pudding
4 cups milk
1 can sweeten condensed milk
20 vanilla wafers crushed

Make cake per box instructions in  9x13 baking pan.  When done take out and poke wholes all in cake. In a bowl mix the pudding and milk all together until smooth. Pour over cake. Pour the sweetened condensed milk over the cake too.  Sprinkle the crushed wafers all over cake and enjoy.. You can put spread whipped topping on cake after it cools and then sprinkle wafers on top if you prefer. Keep refrigerated.

Brunch Casserole..

This time of the year is a very hectic for me at work. So I have made a brunch casserole for them tomorrow since they will be out of school. 

1 pd. sausage 
1/4 cup flour
2 tablespoon parmesan cheese
3 cups cheddar cheese
3 cups milk
salt and pepper to taste
1 large bag of hash browns

Cook sausage and crumbled into small pieces, cook for about 5 minutes.  Add flour and parmesan cheese and stir for about a minute. Add milk, salt and pepper and stir until gets thick. Butter a 9x13 pan and place the hash browns in the bottom of dish. Sprinkle half of the cheese over the hash browns. Pour milk mixture over top and sprinkle rest of cheese onto and bake for 45 minutes and dig in.

Orange creamsicle fudge

Awesome gift idea..  My mom is the queen of fudge making..

3 cup sugar
1 1/2 stick margarine
1 small can cream
12 oz bag white chocolate chips
1 jar marshmallow cream
3 teaspoon orange extract
5 drops yellow food coloring
3 drops red food coloring


Bring sugar,margarine and milk to a full boil. Stirring constantly.. Remove from heat and add white chocolate morsel and marshmallow cream and mix well. Pour into buttered baking dish lined with wax paper.

Peppermint Bark..

This is very easy and a great gift idea..

1 pk. white almond bark
1 pk peppermint candy canes

Melt bark until smooth. Pour onto wax paper and spread out. Crush up your candy canes and sprinkle all over bark. Let set up and break into pieces. You can place these is cute treat bags or jars if you want to give as a gift..
