Peachy Cream Pie with Streusel topping...

I love peaches, and anyway I can find to use them in a recipe I do...  This is a awesome pie..

3/4 cup sour cream
2 oz. cream cheese
3/4 cup sugar
3 tablespoon cornstarch
2 eggs beaten
1 tablespoon vanilla
2 teas. cinnamon
2 15 oz. cans sliced peaches
1-9 inch unbaked pie crust


Strain peaches from juice as much as possible. If peaches are think cut them thiner.
Cream cream cheese and sugar together until softened. Mix in sour cream and cornstarch until smooth. Add eggs, vanilla and cinnamon. Carefully fold in peaches. Place into pie crust and top with streusel topping below.

Streusel Topping

1/2 cup all purpose flour
1/4 cup brown sugar
1/2 stick unsalted butter
1/2 teas. cinnamon

Combine all ingredients together and place in food processor, pulse until crumbly. Place on top of pie and bake at 415 for 40 minutes. tent with foil for awhile so that streusel don't burn. Enjoy..

Broccoli Beef Stir Fry with Rice

This is a great take on this Chinese dish. My kids ask for Chinese occasionally and this is one of the dishes I make for them..


1/4 cup all purpose flour
1 can beef broth
2 tablespoon soy sauce
1 lb. round steak cut into strips
1 clove garlic minced
4 cups fresh broccoli


Mix the flour, broth and soy sauce into dissolved.  Cook steak strips for 2 to 4 minutes until brown in a skillet. Stir in the mixture and the broccoli with the meat and simmer for 10 minutes until sauce is thick. Make some rice and dig into this awesome dish...

Hamburger Steak...

This is a very tasty and budget friendly meal.  I love to make this.


2 lbs. ground chuck
3 tablespoon Worcestershire sauce
1tablespoon minced parsley
2 cloves garlic minced
3/4 teas. Salt
1/2 teas. Pepper
1 sm can mushrooms
1 can beef broth
1 pk. Pioneer brown gravy mix


In a large bowl combine ground chuck, worcestershire, parsley and garlic together. Shape into patties. Heat a lg. skillet and place patties in. Cook 4 to 5 minutes on each side. Drain skillet. Add patties back to skillet. In a small bowl add the broth, gravy pack and mushrooms. Bring to a boil and simmer for 10 minutes. Serve over cooked egg noodles, mash potatoes or rice.  Get some green beans or a nice salad and dig in. Don't forget a roll.
