Barbecue Baked Beans..

I came up with these beans while I was experimenting. My whole family loved these so they are a keeper... These are a great beans to make with your Memorial Day meals..

1/2 lb. ground beef
1 can pork-n-beans
1 can northern beans
1 can light red kidney beans
1 tablespoon mustard
1/2 cup hickory barbecue sauce
1/4 cup ketchup
1 teas. chili powder
1/2 lb bacon


Mix all the ingredients together and place bacon on top. Bake at 350 for 40 minutes.. Enjoy..

Barbecue Chicken grilled...

It is time to kick off the Holiday weekend by getting outside and enjoying the warm weather..  And what better way to do this than to fire up the grill and eat outside..This is a awesome juicy chicken and a great start to the kick off of summer.....

Marinade
1 32 oz carton of chicken broth
1/4 cup olive oil
2 oz mccormick grill mates Montreal chicken seasoning
3 garlic cloves minced
8 pieces of chicken

Glaze
1/8 cup dijon mustard
1/4 cup honey
1 tablespoon olive oil


Mix the chicken broth, olive oil, Montreal chicken seasoning, and garlic cloves. Place the mixture and the chicken in a gallon sized plastic zipper bag and marinade over night or longer.
Mix the dijon mustard, honey and olive oil together and brush on chicken as it is cooking.  Cook chicken until done on a grill. Different grills vary in cooking time and size of chicken. Just make sure centers are done and not bloody.  Enjoy this with my baked beans, mac-n-cheese, potato salad or corn on the cob recipes.. Happy Grilling..

It's time to kick off summer this weekend guys... I am planning grilling and relaxing with my family.  Its time to get outside and enjoy the warmer weather and the sunshine. I have lots of yummy recipes to share with you all this weekend, to help make your holiday yummy too.  Hope you all have a great long kick off to summer weekend...  I will be making.....

Chicken Stir Fry

This is a recipe that I got from a friend of mine years ago. This is another dish I make when my kids want Chinese. It is simple but delicious.

1 lb. chicken breast or strips
1 bag of frozen stir fry veggies ( your choice) I use broccoli, cauliflower and carrots
soy sauce to taste  ( I use the low sodium)
1 8 oz box spagetthi noodles


Cook chicken until completely done. Cut into small size pieces. Cooking time will vary according to size of chicken. You can use tenders and it doenst take but about 5 to 10 minutes. I cook these on the stove in a little olive oil. In another pot boil and drain spagehtti nooodles per pack directions. In a third pot cook your veggies until tender but still firm. When everything is done in a large pot put the spagehtti noodles, chicken and veggies and add soy sauce to taste and stir all together and dig in. I usually never have any left.


Cooking Tip of the Week....

To remove the burnt taste from scorched milk.. Put the pan in cold water and add a pinch of salt to milk....

Peachy Cream Pie with Streusel topping...

I love peaches, and anyway I can find to use them in a recipe I do...  This is a awesome pie..

3/4 cup sour cream
2 oz. cream cheese
3/4 cup sugar
3 tablespoon cornstarch
2 eggs beaten
1 tablespoon vanilla
2 teas. cinnamon
2 15 oz. cans sliced peaches
1-9 inch unbaked pie crust


Strain peaches from juice as much as possible. If peaches are think cut them thiner.
Cream cream cheese and sugar together until softened. Mix in sour cream and cornstarch until smooth. Add eggs, vanilla and cinnamon. Carefully fold in peaches. Place into pie crust and top with streusel topping below.

Streusel Topping

1/2 cup all purpose flour
1/4 cup brown sugar
1/2 stick unsalted butter
1/2 teas. cinnamon

Combine all ingredients together and place in food processor, pulse until crumbly. Place on top of pie and bake at 415 for 40 minutes. tent with foil for awhile so that streusel don't burn. Enjoy..
