I Want Spring!!!!!


Keeping Healthy Snacks on Hand

I like to make sure that I keep my pantry stocked with snacks for the kids that are good for them. I keep,fresh fruits, granola, cereal,oatmeal,crackers granola bars, cereal bars, applesauce, popcorn and fruit cups on hand all the time. We have control of our kids eating habits while they are young. So what  they eat when they are young, they take with them into their adult lives. I like to think we are helping them have good eating habits early.


Pizza Casserole

This is a great casserole to replace pizza for your kids.  You can put any toppings you like on a pizza in this.  It's is very simple and quick.

2 cups spiral noodles
1 lb. ground beef
Garlic clove
1 Cup pepperoni
1 16 oz pizza sauce
Olives
4 tablespoon milk
2 cups mozzarella cheese

Cook and drain noodles per package directions. Brown and drain ground beef and mix garlic and simmer for a few minutes. Add the rest of ingredients and simmer for 10 minutes. Top with cheese and  Bake 350 for 20 minutes.

Opt. Toppings
Peppers
Onions
Mushrooms
Sausage

Chicken Stroganoff

Yes, I am having a chicken kick. I promise, NO more chicken this week. Lol

Chicken Stroganoff

2 tablespoons butter
1 lb. chicken breast
2 cups mushrooms
1can cream of chicken soup
1 cup sour cream
4 cups egg noodles

Cook chicken in butter until cooked all the way through. Cut into pieces. Cook noodles in large pasta pot, boil until done per package directions. Add mushrooms,cream chicken soup,sour cream to chicken simmer until mushrooms are tender. Drain noodles and mix with chicken mixture.  This is great with Limas or peas.

Peach Cobbler

Yum and easy is all I can say about this.. 

Peach Cobbler

1 cup milk
1 cup self rising flour
1 cup sugar
2 cans of peaches drained
2 teas cinnamon
1 Stick butter
1/2 cup brown sugar

Melt butter in in a small baking dish. I have a round one that I love. Mix flour, sugar, milk  in bowl with butter.  Mix peaches and brown sugar and cinnamon together and pour over top of milk mixture in bowl. Dont stir... bake 350 for 1 hour.

Pulled Pork

This is a Great meal to put in the crockpot the night before.  I never have a speck of this left when I make this.


Pulled Pork

1- 3lb Boston butt
1 cup of Scott's barbecue sauce

Place roast and sauce in crockpot and cook all night on low.  If you don't like the vinegar base sauce's you can use a can of coke or dr pepper. Then add more sauce to meat when you are ready to eat. My kids like this with Mac-n-cheese.


Crockpot Mac-n-Cheese

8 oz cooked and drained macaroni noodles
1 lg. can evaporated milk
1 1/2 cup milk
2 cups cheddar cheese
2 cups sharp cheddar cheese
1/4cup butter
2 eggs
Salt and pepper to taste

Add all ingredients to crockpot and cook on low for  3 to 4 hours. Or high for about 2 hours if need quicker.  


 

Chicken Salad

I had a few pieces of chicken left over from last night's Tortilla Soup. I didn't have enough to make a big enough dinner for us tomorrow. So I took the left over chicken and made some chicken salad. That way the kids would have a after school snack to hold then until dinner. It is always good to try to make a few meals out of one.


Chicken Salad

2 cooked chicken breast
2 Granny Smith apples cored and chopped
1cup pecans chopped
1celery stalk chopped
2 tablespoon lemon juice
5 tablespoon plain yogurt
5 tablespoon mayo
Red grapes sliced as many as you like
Crescent rolls

Mix all ingredients together and put on crescent rolls. I love these with kettle chips. This is also a great baby or wedding shower sandwich.
