What's going on today..

We have lots to do today. My husband is leaving for his new job tomorrow, So I want to make him a special dinner this evening to celebrate. My daughter and I have lots of shopping to do to get ready for her sixteenth birthday party soon. I want to make a winter wreath for the front door. I am going to go get started on my day and I will post all my dinner and finds this evening..

What's for dinner..

Tonight we had Tater Tot Casserole. It has everything that kids loves and moms too. Very easy and budget friendly..


Tater Tot Casserole

2 lbs. ground beef
2 can cream mushroom soup
2 cups shredded cheese  ( cheddar or mozzarella )
1 bag of tater tots

Brown ground beef and drain. Add soup and a little water to make it creamy. Simmer for 5 minutes. Pour into bottom of a 9x13 baking dish. Sprinkle 1 cup cheese over top of meat mixture.  Place tater tots on top of cheese. Add the last cup of cheese to top of tater tots. Bake at 425 for 25 minutes and enjoy..

What's for dinner..

I so need to go grocery shopping, but I just haven't had the time. So today I made a taco nacho salad with what I had on hand, instead of what I usually use. So instead of Mexican style cheese I used mozzarella and instead of tomatoes I used rotel.. It actually turned out pretty good.

Taco Nacho Salad 

2 pounds ground beef 
2 taco seasoning packs
1 can rotel
jalapeƱos
mozzarella cheese
1 can black beans
ranch dressing
taco sauce
tortilla shells
lettuce shredded

Brown and drain ground beef. Add taco seasoning packs and a little water per package. Simmer for a few minutes. Get a large bowl and place tortilla shells in bottom then lettuce,beans,meat cheese,rotel,jalapenos,ranch dressing and taco sauce and dig in.

What's for dinner tonight..

Monday's are long days for me at work. So I try to take advantage of my crockpot on these days.
So I made pulled pork sandwiches for the family today.

Pulled Pork

1 boston butt ( I used a 6 pound one.)
2 cups vinegar
2 tablespoon hot sauce
1 tablespoon crushed red pepper

Place Boston butt in crock pot and add all the other ingredients too it. Cook on low for 6 to 8 hours. I like to cook it until it falls completely apart and shreds with a fork.

Peperoncini Pepper Meat Sandwiches..

1 large roast ( your preference)
2 cans beef broth
1 jar Peperoncini peppers and juice
Italian seasoning

Sprinkle both sides of roast with Italian season and place in crock pot. Pour peppers and juice on roast and add broth. Cook on low all day and when roast falls apart its done. You can eat this alone, over rice or as a sandwich, which is my favorite way to eat these..

Today...

I have lots of cleaning to do today. I have some new spice racks my dad made me to put up. I am going to reorganize my pantry. Also my husbands closet, getting him ready for his new job...  I have Peperoncini pepper Meat Sandwiches in the the crockpot for us to enjoy this evening.  What better for a rainy day at home..  Pictures coming this evening..

What's for dinner..

Homemade Vegetable Soup..

I am still on long hours at work, so I am having to make quick meals. The weather is really cold so I thought what would be better than soup to warm us all up..

1 lb. ground beef
1 can black eye peas
1 can diced tomatoes
2 can potatoes
1 cup frozen limas
1 cup frozen white corn
2 cans beef broth

Brown and drain ground beef. Add black eye peas, tomatoes,potatoes, limas, corn and beef broth.
Bring to rapid boil and cook until limas are tender. Around 10 minutes. Make some corn bread and enjoy..
