Tropical Carrot Cake is my dads favorite cake in the world. So I make it for him a lot. This is a awesome cake. You will love it.

3/4 cup buttermilk                                                       1 teas. vanilla
2 cups all purpose flour                                               1 stick butter

Beat eggs, oil, and buttermilk together. Combine flour, sugar, soda, cinnamon and salt in a bowl. Mix in with egg mixture. Stir in vanilla, carrots, pineapple, walnuts and coconut. Mix well. Pour into two greased 9 inch round cake pans for around 30 to 35 minutes. Or a 9x13 baking dish and bake 45 to 50 minutes. Ovens vary so I would check after 35 minutes with toothpick.

All you need is some frozen corn, hawaiian rolls and green beans, a nice salad with whatever toppings you like. Make a nice fruit try and you are all set for Easter..  I hope that I have helped you all with menu ideas and recipes. Have a great Holiday....

Mounds Bars

I love Almond Joy an Mounds bars. I made these for our family Christmas get together this past year. I only got one, and I had to fight my dad and aunt for it. :)

1/4 cup white sugar
1/2 cup melted butter
1 14 oz. can eagle bran
2 cups coconut
1 12 oz. pk. semisweet chocolate chips melted

Combine graham cracker crumbs, sugar and butter together. Pat in 9x13 baking dish. Bake for 15 minutes at 350.  Mix eagle bran and coconut and spread over crumb mixture. Bake 15 more minutes. Cool completely and pour melted chocolate chips over top of coconut mixture. Enjoy!!

Cabbage Bomb

This is a recipe that my neighbor made for a pool party. I liked it so much that I make it all the time now. I love it with the Soda can Chicken.

1 head of cabbage
1/2 stick butter
1 small bottle of Italian dressing or Sun dried Tomato dressing
bacon bits

Wash head of cabbage. Cut the core out and make a whole in center of head. Don't cut all the way through. Fill with butter, dressing and bacon bits. Bake for 2 hours in over or grill.  Or can microwave for 20 to 25 minutes.

Soda Can Chicken

This is a great recipe to make anytime. It is great grilled or baked. My family loves this and there is never a bite left. They have ask me for it tomorrow. So that is what they will get.  You will love this.. This is also a good Easter main dish if you don't eat pork.

1 whole Chicken
1 Creole season butter injector
butter
Weber beer can chicken season
1 can lemon lime soda
Potatoes and carrots diced (as many as you like)

Wash chicken and take giblet pack out of inside and trash.  Place the chicken on the soda can in a baking dish, on a stand if you have one. If not just be careful with the can to make sure it stays up. Open can so that the flavor can release.  Inject chicken with the creole butter injector per instructions. Rub chicken all over in butter and cover with weber season. Tent with foil and bake or grill for 2 hours at 400. If you grill place on grill wrack not in baking dish. Wash and dice potatoes and carrots and season with olive oil and salt, pepper and morton season salt. Add the last hour of cooking.
