Sour Cream Chicken Enchiladas

Baked Flounder Fillets...

I love flounder, and have just recently started experimenting with making it myself. So far this is the best way I have found to make this without frying it.

cooking spray
2 lbs. flounder fillets rinsed and patted dry
1/4 teas. salt
3 tablespoon lemon juice
1/2 cup parmesan cheese
1/4 cup butter melted
3 tablespoon mayo
2 teas. chive and tarragon seasoning

Place fish in a 9x13 baking dish sprayed with cooking spray.  Season both sides of flounder fillets with salt and place in baking dish, and brush 1 tablespoon of lemon juice on flounder. Mix parmesan cheese, melted butter, mayo and the other 2 tablespoons lemon juice in a bowl and spoon over fish. Bake flounder in preheated over at 375 for 10 minutes then switch oven to broil and brown fillets for 3 to 5 minutes only.  Make you some cole slaw and potato fries ( my recipes :)) and some hushpuppies and dig in...





Milky Way Cake...

This is a cake that I have never tried. But today is my moms birthday and she loves milky ways so im going to make this cake for her. Im sure she will love it.. Happy Birthday Mom....


11 whole milky way bars
3 sticks margarine
2 1/2 cups all purpose flour
1/2 teas. salt
1/2 teas. baking soda
1/2 cups buttermilk
3 teas. vanilla extract
2 cups sugar
4 eggs
2 cups powdered sugar
1 dash salt
1/2 cups milk (more if needed)
1 cup finely chopped pecans


Preheat oven 300.
In a double boiler or a saucepan over very low heat, melt 8 Milky Way bars together with 1 stick of margarine, stirring to combine. When melted remove from heat and set aside.  Sift flour and salt together and set aside. Mix baking soda with buttermilk, then add 2 teas. vanilla and set aside. Cream 1 stick of margarine with 2 cups of sugar. Add eggs one at a time. Add flour mixture and buttermilk alternately to creamed mixture, mixing after each addition. Add melted candy bar mixture and mix well.   Pour into a 9x13 baking dish and bake for 1 hour or until cake is done in center.  Remove and allow to cool.
To make Icing, melt remaining 3 Milky Way bars and 1 stick of margarine into double boiler or sauce pan on very low heat. Add powdered sugar, salt, milk, vanilla and chopped pecans and stir over low heat. Add more milk if needed. Pour over cooled cake and allow to set. Cake will be very sticky... Don't expect a neat and perfect cake slices, this is a very messy cake..





Hushpuppies...

Everybody loves hushpuppies with fish.


6 cups of peanut oil
1 1/2 cup self rising cornmeal
1/2 cup self rising flour
1/2 teas. baking soda
1/2 teas. salt
1 small onion chopped opt.
1 cup buttermilk
1 egg lightly beaten

Using your fry daddy or a deep pot preheat oil to 350. In a mixing bowl stir cornmeal, flour, baking soda, salt and stir in the onion. In a smaller bowl mix the buttermilk and egg together. Pour wet ingredients into dry ingredients and mix until blended. Drop batter in fryer in tablespoonfuls. After each puppy dip spoon in glass of water. Fry until golden brown and make sure to turn these during the cooking process.



My Favorite Lunch....

Roast beef and munster cheese yummmmmmmm... I have this for lunch on most weekends..


1 loaf of french bread
1 lb deli roast beef
1/2 lb. Munster cheese
mayo
dijon mustard
salt vinegar chips


Cut some slices out of the french bread loaf. Spread mayo on one and dijon mustard on the other. Put roast beef and munster cheese on slices and get some salt and vinegar chips and take a break from all the laundry and house cleaning that you have today...

Chicken Divian

I love Chicken and Broccoli together. And with all the cheese in this dish the kids will love it too. It is a great way to use up leftover chicken and broccoli.

2 pks. frozen broccoli florets
 2 cooked boneless chicken breast chopped
1 can cream of chicken soup
1 can cream mushroom soup
1/2 cup mayo
1 teas. lemon juice
1 1/2 cup shredded cheese (I like pepper jack)


Place broccoli in bottom of a 9x13 baking dish. Top with chicken. In a small bowl blend the cream of mushroom soup, cream of chicken soup mayo and lemon juice together. Pour over the chicken and broccoli. Top with cheese  and bake at 350 for 35 to 40 minutes.




Thought of the day..

We have so many needs in our life, but at the end of the day, all we need is to be needed....

Northern Bean with Ham and Cornbread

These are a great crockpot rainy day dinner. You can put them in early and they will be ready in plenty of time for dinner. Very budget freindly, goes all way and easy....

1 lb bag northern beans
1/2 lb. cooked ham
2 teas salt
1 teas white pepper



Wash beans and place in crock pot. Place ham and add salt and pepper. Fill crock pot with water until a inch over beans and cook on medium all day. Make some corn bread and enjoy...


Moms Chocolate Pound Cake with Chocolate icing

If you love Chocolate, you are going to love this cake. My mom gets so many comments about this cake. She made it for our reunion, so I wanted to share it with all of you...


2 sticks butter
1/2 cup crisco
3 cups sugar
5 eggs
3 cups cake flour sifted
1/2 teas. baking powder
1/2 salt
1 cup milk
1 teas.vanilla and butter flavoring
4 tablespoon cocoa

Cream butter,crisco and sugar together. add eggs one at a time. Beat well after each one, Add flour and baking powder in a small bowl. Pour lemon, vanilla and butter flavoring together with milk. Add flour mixture and milk mixture alternating in between..Grease a tube pan and flour. Bake 350 for 1 hour until tooth pick comes out clean.

Chocolate Icing

4 cups confectinoary sugar sifter
1 stick butter softened
1/2 cup crisco
1 teas vanilla and butter flavoring
3/4 cup cocoa

Mix all ingredients together until smooth and creamy. If the icing is a little stiff add a teaspoon milk until spreadable. Keep cake in a cool place..




Cooking tip of the week....

Try using milk instead of water when making a pie crust to make a more tender crust and to have it brown nicely.
