Shrimp and Grits

Yum!!  This is a dish that when I first heard of it, I was like weird combination. :) But once I actually tasted it, I was completely hooked. It is really yummy.. I always tell my kids dont say you dont like something unless you have actually tried it first..

3/4 cup uncooked grits
6 oz shredded cheese
2 tablespoon butter
2 tablespoon olive oil
2 cloves garlic minced
2 lbs. fresh shrimp peeled and deveined
1/2 lemon juiced
salt and pepper to taste
1 pinch cayenne pepper

Cook grits according to package directions. Stir in cheese and cayenne pepper. Keep warm. Heat butter and oil in a large skillet and saute garlic and stir in shrimp and lemon juice. Saute until shrimp are pink. season with salt and pepper. Spread warm grits on a serving  plate and pour shrimp on top and enjoy....

Chicken Fajitas

This recipes is actually fun for your kids. You can form a assembly line and let them make their on.
And they are very tasty.


2 tablespoon olive oil
3 boneless, skinless chicken breast cut into strips
1 fajita seasoning divided
1/2 cup water
2 onions slivered
3 bell peppers
2 cloves minced garlic
12 fajita size flour tortilla warmed


 Cook chicken in olive oil in skillet until cooked. Should be 5 to 6 minutes. Add half the fajita seasoning and water, mix well and let chicken finish cooking. Take chicken out and cook peppers and onions until  caramelized brown bits show in pan, 3 to 4 minutes. Stir and add in garlic and remaining fajita seasoning mix. Let cook 2 more minutes. Place chicken and onions and peppers on a warmed tortilla shell and enjoy..



Pineapple Angel Food Cake

This is a recipe that someone gave me and it is so easy and yummy.. Try this, you will not believe how simple and good...

1 box angel food cake mix
1 20 oz can crushed pineapple

Mix both together will and pour into a greased tube pan or a 9x13 baking dish. Bake at 350 for 30 to 40 minutes. It will depend on what the box says for pan size. You can also use cherry, blueberry or lemon pie filling instead of pineapple..


Cooking Tip of the week...

Microwave a lemon for 15 seconds before squeezing and you will get double the juice...

It takes a lot of courage to forgive someone, but it takes an even bigger courage to ask for forgiveness.....

Ranch Bacon Burgers...

Everybody loves a great burger. These burgers are a great combination of three things that I really love to eat.
They are very easy and yummy...

2 lbs. ground beef
1 pk. ranch dressing
buns
Cheese
tomatos sliced
lettuce
bacon slices


Mix the ranch dressing with the ground beef and grill until done. Place on bun with cheese, sliced tomatos, lettuce and bacon slices. I like to use ranch dressing on these instead on mayo. You can make these with my potato salad, homemade fries or even macaroni salad...

Banana Pudding Squares....

These are really yummy. You do have to refrigerate for 3 hours befor eating, so better make ahead of time.. You can even use sugar free ingredients in this recipe..

35 vanilla wafers finely crushed
1/4 cup margarine melted
1 8 oz cream cheese softened
1/2 cup powdered sugar divided
1 8 oz tub cool whip
3 bananas sliced
2 pks. jello vanilla flavor instand pudding
3 cups cold milk
1/2 oz semi sweet chocolate grated

Mix wafer crumbs and margarine together. press onto the bottom of a 9x13 baking dish. Beat cream cheese and sugar in medium bowl with whish until blended. Stir in 11/2 cups cool whip; spread over crust. Top with bananas. Beat pudding mixes and milk with a whisk  for 2 minutes, spread over bananas. Top with remaining cool whip and chocolate. Refrigerate for 3 hours before serving..



Fish Tacos..

Yes.. I even made a Mexican dish out of fish. :)  These are really good and worth trying...

1/2 cup tarter sauce
1/2 cup salsa
1/2 cup seafood fry mix
1 tablespoon cummin
1 lb. flounder or tilapia fillets cut into strips
oil for frying
flour tortillas warmed

Mix tarter sauce and salsa together. Keep cold until ready to use. Mix fry mix with cummin together and moisten fish and coat in mix. Let stand for 5 minutes. Place oil into fryer or large skillet. Heat up to 375 on medium heat. Fish usually take 3 to 5 minutes and will float when done. Drain and place in tortilla shells. Can add any topping you wold like. Cabbage, shredded cheese, sliced avacado or chopped tomatoes.
