Winter Wonderland Bars

These are a great snack for the kids after school. They are so good and loved by all in my family.

1 cup graham cracker crumbs
1 stick butter
1 cup chocolate chips
1 cup butterscotch chips
1 cup coconut
1  cup peacns chopped
1 can eagle bran milk

Melt butter in bottom of 9x13 baking dish. Sprinkle graham cracker crumbs on top of butter. Layer chocolate chips, butterscotch chips, coconut, pecans and drizzle eagle bran all over top and bake 25 minutes at 350. You will be loved by all for these.  I even add extra choclate and butterscotch to them sometimes.

Chicken Tortilla Soup

Mondays are very busy for me. I usually get home late form work.The boys and Chris have scouts and we need dinner quick. So I have put together some chicken tortilla soup in the crockpot for tomorrow. I try to put something in the crockpot every Sunday night, It keeps me from being in such a rush and the boys get to eat before they have to go. Enjoy..

Chicken  Tortilla

2 or 4 chicken breast
1clove of garlic
2 tablespoon all purpose flour
1can chicken broth
3 cups half and half
1 cup salsa
2 teaspoon cumin
1pk.Fajita season
1can cream chicken soup
1can black beans drained and rinsed
1can kidney beans drained
1can northern beans drained
1 1/2 cup frozen corn shoepeg

Place chicken in crockpot. Cook on high until done and slice it up And all above ingredients and stir.
Cook on low all night. Reheat when ready to eat add tortilla chips, pepper jack or cheddar cheese shredded and sour cream. Enjoy..

Steak and Peppers Sandwichs

This is also a awesome quick meal for a busy day..

Steak and Pepper Sandwiches

Bell peppers, green, orange and red  sliced
2 lbs stir fry meat
1cup soy sauce
1cup worcestershire sauce
Hoggie rolls
Mayo
Dijon mustard

Sauté peppers in butter and cook with meat.  Don't place peppers in sauce with meat.
Brown meat, season with season salt. In bowl mix sauces and place meat when done to soak in sauce.
Take hoggie rolls place cheese of choice inside and broil or a few minutes. When brown and cheese is melted place some of the meat inside with mayo and Dijon mustard. Add peppers. Yum





Baked Spaghetti

1- 8oz box spaghetti noodles cooked
2 tablespoon butter
1 cup grated Parmesan cheese
1- 24 ounce cottage cheese
1 jar spaghetti sauce
1 8oz pkg. mozzarella cheese
1 8oz pkg. cheddar cheese
1 lb. ground chuck
1 lb. sausage Brown and drain ground chuck and sausage.

Cook and drain noodles in large pasta pot. Butter a 9x13 baking dish and place noodles, butter and Parmesan cheese in dish and stir together. Mix sauce with meat and place on top of noodles. Place mozzarella and cheddar cheese and extra Parmesan cheese on top. Cover and bake for 30 minutes at 350. Uncover and bake 15 minutes more. Make a nice salad and garlic bread and there ya go. Grocery list for Baked Spaghetti 1 lb. ground chuck 1lb. Sausage 1 8 oz box spaghetti noodles Butter Parmesan cheese Cheddar and mozzarella cheese 8 oz each 24 oz cottage cheese Garlic bread And what veggies you want in your salad and choice of dressing.
