Mexican Meatloaf

As I am sure that all of you have figured out by now, I love mexican food..... I have found ways to mix it in with our regular meals so that the family don't get tired of it.  This is a great dish....


2 lbs. ground beef
2 cups tortilla chips crushed
1 can rotel
1 can black beans
1 egg
1 pk. taco seasoning
salsa ( I use my recipe for salsa) 
2 cups mexican 4 cheese blend


Mix the ground beef, rotel, black beans, egg, taco season, 1/4 cup salsa and 1 cup cheese blend together and put in a deep pan. 
Bake for 40 minutes at 350. Take out and pour another cup of salsa on top and spread 1 cup of the  cheese all over and bake for another 20 minutes and then enjoy....  You will love this..... You can make the mexican rice with this instead of the potatoes if you like...  





Roasted Potatoes

I came up with this a few years ago for a party we were having.  I was making roasted chicken and I wanted potatoes to go with it and this is what I came up with. I love them with pretty much now with anything...


3 to 5 lbs red potatoes cubed
2 tablespoon basil
1 tablespoon rosemary
2 tables dill
2 table thyme
1/2 cup parmesan cheese
1/2 cup olive oil
salt and pepper to taste
morton season salt taste


Cube potatoes and sprinkle basil, rosemary, dill, thyme, parmesan cheese, salt and pepper and morton season salt.  Pour oil over them and with your hands mix all these together to coat the potatoes good. Bake at 350 for 30 to 45 minutes. Will depend on how many pounds you have. You can even use real herbs but in the I really like the dried ones best...




Pineapple Sherbet

I love pineapple sherbet. I remember having it when I was a child at my grandparents house. It isn't easy to find at the store, so I found this recipe and I love it and can have it as much as I want....


72 oz pineapple juice
1 15 oz can crushed pineapple
1 10 oz can evaporated milk


Mix all ingredients together and freeze for 8 hour and enjoy...

Chicken Casserole

This is the first dish that I ever cooked. It turned out really good. I make it still and it is still a favorite of mine. It is so easy and really quick ..



1 lb chicken breast cooked and shredded
2 cans mix vegetables
2 can cream chicken soup
1 box stove top stuffing


Boil chicken and shredded. Mix the chicken, mixed vegetables, soup together. Place in a baking dish.  Make the stovetop stuffing in microwave per box instructions. PLace it on top of the chicken mixture and bake 350 for 30 minutes.



Growing your own herbs

I love my plants as you all know. I have recently started trying to grow fresh herbs. So far so good..
I love to put these in my dishes and enjoy the fresh taste of these. And the fact that I grew them myself makes them even taste better.....

Thought of the day


The past can hurt... But the way I see it, you can either run from it or learn from it.....

Strawberry Yogurt and Banana Cups

These are quick and easy. Not to mention healthy for you. :)

2 containers strawberry yogurt
1 banana
 shredded wheat cereal


In a big cup
put the yogurt and sliced bananas and shredded wheat cereal. Enjoy....

Low Country Boil

This is one of my favorite meals to eat in the summer.. When we are at the beach, I have got to have this. Since we have worked hard all day in the yard. I thought this would be a nice treat for us all.. This is a awesome meal and my whole family loves this.


2 lbs. medium or large shrimp
1 kielbasa sausage cut in chunks
12 baby ears of corn
3 to 5 lbs. red potatoes cut into chunks
1 crab boil package
creole season
2 lemons sliced into


Start out in a huge pot with water and crab boil package. Boil potatoes for about 10 to 15 minutes. Then add the corn and kielbasa and let cook until corn is done. Then add the shrimp and lemons  last and when it is pink it is ready.  Drain pot and pour all the goodies onto some newspapers. Get you a nice loaf of crunchy bread and dig in. You can also add a couple pounds of crab legs to this. Hope you guys enjoy....

Tuna Macaroni Salad

This is a great quick lunch meal or even dinner when you are in a hurry. It is very easy and tasty. We are having a family work in the yard day, so I needed a quick lunch idea for us.

2 cups elbow macaroni
1 cup mayo
1/2 jar of dill pickle relish
2 cans tuna packed in water
2 teaspoon morton season salt


Boil and drain noodles. In a bowl mix the mayo, pickle relish, tuna drained, season salt together and add noodles. Enjoy...








Fruit and Juice Frozen Treats

The whole family is working outside today to get the yard bad in shape from the winter.  We are all hot and tired and need a pick me up. These are so good and refreshing. They just hit the spot...


1 carton of your favorite lemonade
kiwi peeled and sliced thin
peaches leave peel on and slice
blackberries
lemon slice with peel
strawberries slice
raspberries
pop cycle sticks

Fill pop cycle holders up with fruit. Pour in lemonade until full. Then Freeze and there they are...
