Thought of the day


Life is ten percent what happens to you and ninety percent how you respond to it....

Grilled Beef and Chicken Kabobs

I love to try new things, especially in the summer. I decided to make these a couple years ago at one of my moms birthday parties.. They were a huge hit and have become a must at our house...



Chicken kabobs marinate:

1/2 cup olive oil
1/2 cup ranch dressing
3 tablespoon worcestershire
1 tablespoon minced rosemary
1 teas. lemon juice

Beef kabobs marinate:

1/2 cup worcestershire
1/2 cup soy sauce
1 teas. red pepper flakes
garlic clove
1/2 cup olive oil


Marinate the meats in the marinate for 30 minutes.  Place on skewers and grill for 10 to 15 minutes. Just make sure the chicken is not pink and cook the beef to your preference.  You can add peppers, onions or any kind of veggies that you like to these.. Hope you all enjoy these... I am not a huge fan of either so I usually make my roasted potatoes with these...






Grilled Corn on the Cob with Basil Butter

We all love corn, but I especially love it when my dad grows it.  It is great on the grill and so easy to make...


8  ears of corn on the cob
1 stick butter softened
1/2 cup basil minced
sea salt
foil


Mince the basil and mix it with the butter. Now it is time to get messy. With your hand spread the butter  mixture all over the corn. Place on foil and sprinkle sea salt all over it and. Wrap ear and place on the grill. Grill the corn with the grill close for 20 minutes. Turn the ears every 5 minutes just a quarter turn.. These will be very hot so let set for awhile and be very carful when you open the foil... Enjoy...





Grilled Pineapple

I love all kinds of fruit. I try them in all kinds of recipes. I tried grill pineapples a few years ago and they are wonderful..


1 whole pineapple
1 tablespoon butter
1/2 cup brown sugar
1 teaspoon lemon juice


Fire up the grill and sprinkle the pineapples with a little brown sugar.  In a sauce pan heat butter, brown sugar. Heat until bubbly and until sugar is melted.  Baste the pineapples every time you turn them which should be 3 or 4 times. Take them up and drizzle any butter mixture over them and enjoy...

Loaded Baked Potato


I love bake potatoes.. But they have got to baked in the oven, not a microwave. I make these as a meal sometimes and they are so good..

4 to 6 baking potatoes
1 bag of frozen broccoli florets cooked
2 cups cheddar cheese shredded



Wash and put a few slits in a potato. Coat outside with olive oil and sea salt and wrap in foil. Bake until a knife can go straight through potato. Usually around 1 hour, depends on the size of the potato.. When 
potatoes are done smash them on the ends so that the insides push out or slice in the middle. Then put the broccoli inside and top with the cheese.. Dig in and enjoy...

Lemon Blueberry Yogurt

There is all kinds of yogurt to choose from. But sometimes they just don't have the flavor combinations that we would like. So I like to add fruit to mine to get the flavors Im looking for.. This is a great way to eat healthier, instead of a lemon blueberry cupcake try this instead....

2 containers lemon greek yogurt
blueberries



Put the yogurt  in a dessert cup and top with blueberries or any other fruit of your choice.

Homemade Baked fries

Everybody loves fries, but we all try to stay away from fried foods as much as possible. So why not make your on and bake them.  They are just as good and much better for you.

3 lbs. potatoes
sea salt
pepper
paprika
onion powder
garlic powder

Wash and dice potatoes. Place on baking sheet and bake. Sprinkle sea salt, pepper, paprika, onion powder and garlic powder on the potatoes and bake at  400 for  20 to 30 minutes. Get you some ketchup and dig in..
