Chili Beans and Cole Slaw

The weather is changing daily now, so I had to try to get another pot of chili in before it gets to hot.  I just think it is best when its colder.

Chili Beans

1 lb. ground beef
2 cans pintos
1 can red beans
1 can rotel
2 cans tomatoes
2 pks. chili mix  (I like chili-o mix)
1 tablespoon cumin

Brown and drain ground beef. Add pintos, red beans, rotel, tomatoes, chili-o mix And cumin to a pot. Simmer as long as you like and enjoy.

If I have chili beans, I have to have cole slaw and rolls. It is a cool bite and a hot bite. They balance each other out. And are both so good together.

Cole Slaw

1 head a cabbage
1 wedge of purple cabbage
1 cup mayo
2 tablespoons pickle juice
1 carrot shredded finely
1/2 jar dill pickle relish
salt and pepper to taste
morton seasoning salt to taste

Shredded both cabbage's and carrot together. Add mayo, pickle juice, pickle relish, salt, pepper and morton seasoning salt. If slaw isn't moist enough add more mayo.
