Lime Bars

These are a must when the weather gets warm. I think of a tropical island when I make these.. They are so good and refreshing.

Bottom layer:
1 cup all purpose flour
1/4 cup powdered sugar
1/2 cup butter

Top layer:
2 eggs
2 tablespoon fresh lime juice (1 large lime)
1/2 teas. grated lime zest (opt)
1 cup white sugar
2 tablespoon all purpose flour
4 to 5 drops green food coloring

For bottom layer:
Mix together the flour and powdered sugar. Cut in butter until crumbly and clings together. Press dough in a 8x8 baking pan. Bake 325 for 20 to 25 minutes or until lightly browned.

Top layer:
In a bowl beat the eggs and add lime juice, zest, sugar, flour and food coloring. Mix well and pour over the baked crust while hot. Bake for 20 to 25 minutes at 325. Remove from over and sprinkle powdered sugar on top and let cool and cut squares..  If you want to double this recipe use a 9x13 pan..
