These are two of my favorite things in a dessert. So when I found this recipe I was so excited to make these. They are awesome.
3 1/2 cups all purpose flour divided
1 cup coconut
1 cup brown sugar packed
1 teas. baking soda
1 cup butter divided
1 cup sugar
3 large eggs
1 20 oz. can crushed pineapple drained
Combine 2 1/2 cups flour, coconut, brown sugar and baking soda. Use a pastry blender and cut in 1/2 cup butter until mixture is crumbly. Press crumb mixture in to a 9x13 baking dish. Bake 10 minutes. In medium bowl beat 1/2 cup butter and sugar at medium speed until creamy. Add eggs one at a time beating well after each. Add 1 cup flour gradually stir in pineapple and spread evenly over baked layer. Bake 25 minutes. Let cool completely before cutting bars. Top with extra coconut and let brown just a few seconds.
